I first discovered this recipe from a wonderful Facebook page called "Recipes by Lisa", and I'm so excited to share it with you all! It's one of those go-to dishes that quickly became a staple for gatherings and game-day spreads. Easy to make and bursting with flavor, you’ll be coming back for more.

This dip isn’t just about the taste; it’s the perfect combination of textures—smooth and creamy with just the right amount of crunch from the corn and peppers. It truly brings the party to your table, which is why it's such a favorite in my household!

    A Little Cultural Fun Fact:

Mexicorn is a fun twist on a staple of Mexican cuisine, combining sweet corn with bell peppers for added flavor and color. Paired with green chilies and plenty of cheese, this dip brings together the classic flavors of a Mexican fiesta in an easy-to-make, crowd-pleasing dish!

    Ingredients:

    • 1 (11 oz) can Mexicorn (corn with bell peppers), drained
    • 1 (4 oz) can diced green chilies, drained
    • 2 cups shredded cheddar cheese
    • 1 cup shredded Monterey Jack cheese
    • 1 (8 oz) package cream cheese, softened
    • 1/2 cup sour cream
    • 1/4 cup mayonnaise
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp chili powder
    • 1/4 tsp cumin
    • Salt and pepper to taste
    • Optional toppings: diced jalapeños, green onions, or cilantro

    Instructions:

    1. Preheat the Oven:

Preheat your oven to 350°F (175°C) to get it nice and hot for baking the dip.

    2. Mix the Ingredients:

In a large mixing bowl, blend together the softened cream cheese, sour cream, and mayonnaise until the mixture is smooth and creamy. Then, stir in the Mexicorn, diced green chilies, shredded cheddar, shredded Monterey Jack, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Mix well until everything is evenly combined.

    3. Bake the Dip:

Spread the dip mixture evenly in a greased 9x9 baking dish or an oven-safe skillet. Bake for 20-25 minutes, or until the cheese is bubbly and the dip is heated through.

    4. Add the Toppings:

For an extra pop of flavor and spice, top your dip with diced jalapeños, green onions, or fresh cilantro. The garnishes not only add color but elevate the overall flavor!

    5. Serve and Enjoy:

Serve the dip warm with tortilla chips, crackers, or fresh veggies for a delicious, crowd-pleasing snack. This dish is best enjoyed while the cheese is still gooey and irresistible!

    Pro Tips:

    • Spice it Up: For those who love heat, consider adding a few dashes of hot sauce or using extra spicy green chilies.
    • Make it Vegetarian-Friendly: This dip is already vegetarian, but you can use light cream cheese, low-fat sour cream, or low-calorie mayonnaise to make a healthier version.
    • Perfect Pairing: This dip goes wonderfully with margaritas or a cold Mexican beer. It’s also a great side dish for taco night!
