I discovered this recipe on Insanely Good Recipes, and it’s quickly become a favorite in my household. These muffins are not only delicious but also incredibly easy to make. They’re perfect for breakfast, a snack, or even dessert. Plus, who can resist that luscious vanilla glaze drizzled on top?

    A Little Background

Muffins have always been a classic American breakfast treat, loved for their versatility. While blueberry muffins might be the go-to for many, this peach version offers a unique twist. Peaches bring a natural sweetness and juiciness, making these muffins extra moist and flavorful. In addition to their wonderful taste, peaches are packed with vitamins and antioxidants, making them a slightly healthier choice for your next baking endeavor.

    Ingredients

    Streusel Topping:

    • 1/3 cup unsalted butter, melted
    • 1/2 cup packed brown sugar
    • 1/2 teaspoon ground cinnamon
    • 3/4 cup all-purpose flour

    Peach Muffins:

    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/2 cup sour cream
    • 1/4 cup buttermilk
    • 1/2 cup unsalted butter, softened
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 1/2 cups diced fresh peaches (about 3 peaches)

    Vanilla Glaze:

    • 1 cup powdered sugar
    • 2-3 tablespoons milk
    • 1/2 teaspoon vanilla extract

    Instructions

Step 1: Preheat the oven to 425°F (220°C). Line a 12-cup muffin pan with paper liners or grease it with nonstick cooking spray.

Step 2: Make the streusel topping. In a small bowl, stir together the melted butter, brown sugar, and cinnamon. Add the flour and mix until it forms a crumbly texture. Place the mixture in the fridge to chill while you prepare the muffins.

Step 3: In a medium bowl, whisk together the dry ingredients for the muffins: flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate glass or bowl, combine the sour cream and buttermilk until smooth. Set both mixtures aside.

Step 4: In a large bowl, cream the softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy (about 2 minutes). Reduce the mixer speed to low, and add the eggs one at a time, followed by the vanilla extract.

Step 5: Gradually add the dry ingredients and the sour cream mixture to the wet ingredients, alternating between the two. Begin and end with the dry ingredients. On the last addition of the flour mixture, gently fold in the diced peaches, being careful not to overmix.

Step 6: Divide the batter evenly into the prepared muffin cups, filling each to the top. Sprinkle the chilled streusel topping generously over each muffin.

Step 7: Bake the muffins at 425°F for 5 minutes, then reduce the temperature to 350°F (175°C). Continue baking for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8: Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 9: Prepare the vanilla glaze by whisking together powdered sugar, milk, and vanilla extract. Adjust the consistency by adding more milk if needed. Once the muffins are cooled, drizzle the glaze on top and let it set.

Step 10: Enjoy your homemade peach streusel muffins!

    Pro Tips:

    • Use Fresh Peaches: Fresh, ripe peaches give the best flavor and texture, but if you're short on fresh fruit, canned peaches (drained and dried) or frozen peaches (tossed in frozen) can also work.
    • Room Temperature Ingredients: Be sure to bring your ingredients to room temperature before baking. This helps everything combine more easily and results in a smoother batter.
    • Baking in Batches: To get those bakery-style muffin tops, bake 6 muffins at a time in a 12-cup tin. The extra space allows for better heat circulation and encourages the muffins to rise higher.

    Fun Fact:

Did you know peaches are native to China and have been cultivated for over 4,000 years? Today, Georgia is known as the “Peach State,” but California actually leads the U.S. in peach production!
