    This recipe came into my life on a quest to find healthier desserts that don’t sacrifice flavor, and it’s been a family favorite ever since! Not only does it pack in the richness of chocolate, but the zucchini adds moisture without being detectable, which makes this an ideal way to sneak some extra veggies into your diet.     A Little Zucchini Bread History

    Zucchini bread is a popular recipe that originated in the U.S., often linked to the abundance of summer zucchinis. It was traditionally a way to use up garden-fresh produce without wasting it, and the inclusion of zucchini keeps the bread extra moist without affecting its flavor. Over time, creative bakers started adding chocolate to make this bread even more indulgent! If you haven't tried it yet, you're in for a delightful surprise.

    Ingredients

    • 2 cups grated zucchini (about 2 medium zucchinis)
    • 1/2 cup brown sugar
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1/3 cup extra-virgin olive oil
    • 1/2 tsp vanilla extract
    • 1 1/4 cups all-purpose flour
    • 1/3 cup unsweetened Dutch-process cocoa powder
    • 1/2 tsp salt
    • 1/2 tsp baking soda
    • 1/4 tsp baking powder
    • 1 cup semisweet chocolate chips

    Instructions

    1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
    2. Grate the zucchini and place it in a colander to drain the excess moisture.
    3. In a large bowl, combine brown sugar, granulated sugar, eggs, olive oil, and vanilla extract. Beat the mixture until it’s smooth and well-combined.
    4. In another bowl, whisk together the dry ingredients: flour, cocoa powder, salt, baking soda, and baking powder.
    5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
    6. Fold in the grated zucchini and chocolate chips, making sure they’re evenly distributed throughout the batter.
    7. Pour the batter into the prepared loaf pan, spreading it out evenly.
    8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    9. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    10. Slice and enjoy your moist, chocolatey bread!
