    New Peyrassol West Wine Bar to open in Normandy Park in August

    Restaurant veterans Sachia Tinsley and Scott Cory (pictured) are set to open Peyrassol West in Normandy Park this summer, a new wine bar and retail enoteca offering curated wines and small plates.

    Scheduled to open in August at 17833 1st Ave South (map below), Peyrassol West will feature wines by the glass and bottle, an eclectic retail wine selection, a small pantry with local and imported goods, and grab-and-go fare.

    The new location in Normandy Park aims to attract both neighborhood patrons and destination diners.

    Tinsley and Cory previously owned Peyrassol Café at Southport in Renton for 13 years before closing in October 2023 due to lease negotiations falling through. The couple found their new spot in Normandy Park, close to their home, and saw it as an ideal match for their vision.

    “This location is the perfect match of neighborhood and community, with nothing like it nearby,” Cory said. “We are excited to welcome friends, neighbors, and destination diners to our new location. We also hope our guests that loved Peyrassol Café will make their way to Peyrassol West, just 10 miles away from our former Renton location.”

    Chef Tinsley added:

    “Scott has dreamed of a small wine bar and treasured retail spot for years. I’m excited to create the small plates menu inspired by old favorites from Peyrassol Café as well as new dishes to pair and enjoy with Scott’s curated wine list. The food will remain focused on Western European and Mediterranean flavors with a few new, fun surprises thrown in the mix!”

    Peyrassol West will offer a cozy atmosphere with seating for 25, featuring dark wood tabletops, a brick wall, and a quartz bar top. The wine bar will also have a monthly wine club, wine tastings, and a housemade grab-and-go section starting in the fall.

    Tinsley, with 26 years of restaurant experience, co-opened Osteria La Spiga in 1998 and has worked in various esteemed Seattle restaurants. Cory, a sommelier with over 30 years in the wine industry, brings extensive knowledge and a dedication to making wine approachable.
