    Savor Authentic Sicilian Flavors: Fettucini Piccolino

    1 Let’s begin with the noodles. The Piccolino team uses egg noodles for their color, and chooses a 3mm fettucini for its tendency to ribbon up when cooked.

    2 Cream is used for the base of the sauce. To create a complexity in the flavor, shallots and fish sauce are worked into the mix.

    3 Perhaps the most important ingredient, however, is saffron. The world’s most expensive spice, it gives the creamy mixture its yellow color. And, because it springs from a crocus flower, the spice imparts a delicate, sweet floral taste.

    4 Three plump shrimp, wild-caught from Mexico, encircle the silky sauced noodles. The team prefers the Mexican variety because they’re similar to what you’d find in Sicily. And a luscious Boston scallop, seared to perfection, graces the top.

    5 A trio of micro greens finishes the dish. And the hues are intentional—red, green, and white are the colors of the Sicilian flag.
