Recently, I had the pleasure of revisiting Koya Sushi, a spot that had paused its main and side dishes menu during the pandemic but is now back in full swing. Sushi remains the star here, and it's as fresh as ever. The presentation of each dish is a visual treat, from the beautifully arranged sashimi to the meticulously crafted rolls. I tried the Mt Fuji and PDX rolls, along with the Shoten Tower, which was reminiscent of a poke bowl with a delightfully sweet sauce. The bite-sized servings were perfect, and the temperature of the rice and fish was just right, enhancing the flavors beautifully.
The atmosphere at Koya Sushi is simple, focusing more on the food than elaborate decor, which I personally find refreshing. The service is excellent, making the dining experience smooth and enjoyable. They also offer a nice selection of sakes and a tempting Bento lunch menu. Although I found the ramen a tad salty, the noodles were cooked perfectly.
Comparing it to other sushi spots I've enjoyed, Koya Sushi stands out for its high-quality ingredients and the skillful preparation of each dish. It's a gem for authentic Japanese cuisine, and despite its simplicity, the atmosphere and the quality of food make it a memorable spot for sushi lovers.
