    This new Johnson County ice cream shop has opening date, with more locations to come

    Just three years ago, Amber Schreiber opened her first nonprofit ice cream shop at 9540 Nall Ave. in Overland Park, employing several “super scoopers” who have special needs.

    After arduous fundrasing, she’ll celebrate the grand opening of her second location, 10460 W. 103rd St., on Aug. 22. It’s opening in a former McDonald’s.

    Call it the Gilded Age for The Golden Scoop : Even more plans are in the works.

    Schreiber is anticipating pints in grocery stores (hopefully by September), a clubhouse-level ice cream kiosk at GEHA Field at Arrowhead Stadium and even more locations.

    “We want to be very intentional about how we grow,” Schreiber said. “We’re always thinking down the road.”

    While she isn’t ready to announce more locations just yet, she said her team has solidified a growth strategy: work with school districts’ special needs programs and build shops nearby. That way, students can have a job lined up when they turn 18.

    Schreiber and her sister, former behavioral therapist Lindsay Krumbholz, opened their first location in April 2021 to create more job opportunities for individuals with developmental disabilities.

    “It continues to be that they are underworked and overlooked in the workplace,” she told The Star on Monday. “I think it would be good for employers to look at the uniquely abled to fill those positions.”

    Their new location will employ 34 super scoopers. Of their 20 shift leads, one has special needs.

    The menu will be the same: ice cream flavors like coffee toffee, cookie dough and golden crunch. It also sells coffee drinks like lattes and Americanos, as well as baked goods like cinnamon rolls and lemon bread.

    The latest spot will have a drive-thru, which Schreiber admitted adds an extra set of challenges. Regardless, she hopes it will help business and encourage more people to stop by for morning coffee runs.

    “It’s a little intimidating,” she said. “Just get trained, and then we’ll be comfortable.”

    In May 2023, the sisters announced that they were looking to raise $100,000 to open their second location. Now, Schreiber said they’re only out about $15,000 to cover some unexpected issues with the building, which has been around since at least the mid-’90s.

    Leading up to the grand opening, Schreiber said they’ll have several soft openings for friends and donors to work out the kinks.

    Meanwhile, local ice cream shop Betty Rae’s is expanding rapidly across the metro. It recently opened a location and test kitchen in Merriam, at 5740 Antioch Road. Its upcoming Prairie Village location , 5330 W. 95th St., will be near The Golden Scoop’s original spot.

    The new Golden Scoop’s hours will be 7 a.m. to 9 p.m. Tuesdays through Saturdays, and 9 a.m. to 9 p.m. on Sundays. It’s closed on Mondays.
