    Celis in Palm Beach collaborates with former Café Boulud chef on breakfast sandwich

    Could this be one of summer’s must-have sandwiches in Palm Beach?

    You decide: Sure, you have to at least like eggs and appreciate tasty bread, but what about the art of locally made barbecue and charcuterie from a former chef at Café Boulud in Palm Beach.

    The limited-time smokehouse Sammy at Celis Juice Bar in Royal Poinciana Plaza, 340 Royal Poinciana Way in Palm Beach, is billed as a breakfast sandwich, but eat it anytime of day, fans say.

    The sandwich, available through at least mid-August, is on a brioche bun (from Aioli in West Palm Beach) and is a collaboration between Celis Juice Bar and none other than Rick Mace, a former lauded executive chef at Café Boulud.

    Mace, who helmed the kitchen at Café Boulud from 2013 through 2020, has been wowing folks since 2021 at his Tropical Smokehouse BBQ in West Palm Beach, 3815 S. Dixie Highway.

    He’s a neighbor of the Celis Juice Bar location in West Palm Beach.

    At Celis Juice Bar in Palm Beach, the Smokehouse Sammy ($12) is one of many collaborations Mace has relished over the years. It features a smoked chicken chorizo patty, fried egg, cheddar cheese and mango habanero aioli.

    “I love collaborations,” Mace told the Daily News on Monday, adding that he appreciated his years at Café Boulud. "It’s so important to stay connected to your neighborhood — to do things collaboratively that connect people.

    “This most recent collaboration (the breakfast sandwich) checks all the boxes about what we love about local sandwiches, right down to the mangoes (from Tropical Acres in West Palm Beach) for the habanero sauce.”

    Celis also features a new smoothie this summer: The YoMango smoothie ($12) with mango, passion fruit, coconut water and coconut whip.
