Over the years, I've had the pleasure of writing about many recipes created by the incredible Patti LaBelle. From her roasted vegetable medley to her banana pudding , there hasn't been a Patti recipe that I've shied away from. So, when I ran across the recipe for her Wicked Peach Cobbler , I knew it was one I had to try ASAP.
Made with fresh peaches and a promise to deliver a crisp and buttery crust, I couldn't wait to jump in the kitchen and give this one a try. With hopes that it would be just like the one my grandmother used to make, I headed to grab all the ingredients needed and got cookin'.

How to Make Patti LaBelle’s Wicked Peach Cobbler
Begin by preheating your oven to 375° and making your crust. Sift the flour and salt into a large bowl. Add the shortening and cut it into the flour until the mixture is well combined and fine. Gradually add the ice water, mixing until a stiff mound of dough forms. Transfer the dough to a lightly floured surface and divide it into two equal parts. Roll out the first half and use it to line a 9 x 13-inch glass baking dish. Roll out the second half and wrap it around the rolling pin until you're ready to use it.
For the pie filling, combine the peaches, corn starch, lemon juice, cinnamon, butter and vanilla in a large bowl. Toss until everything is well mixed. Pour the filling over the pie crust in the baking dish. Lay the remaining pie crust on top of the filling. Press the edges to seal, using a fork dipped in flour to crimp and secure the sides. Make five or six slits in the top crust for venting before sprinkling with cinnamon and sugar. Bake for 45 minutes, or until the pie is bubbly and golden brown.
