We Tried Simone Biles' Favorite Cookies and They Deserve a Gold Medal

It’s safe to say that we all have Olympics fever this month, and, of course, the sport everyone's eyes is gymnastics , particularly the USA women’s team . Simone Biles , the team's 27-year-old superstar, cemented the team's gold medal win with her near-perfect routine at the 2024 Paris games, making her the most decorated US gymnast in Olympics history.
Thankfully, her talents don't stop on the mat. Her now-revealed recipe for s'mores cookies is making the rounds on the internet—in part because they're so darn easy. I wanted to relish in the joy of her win for Team USA , so I grabbed the ingredients and got ready for a kitchen win that's worthy of its own gold medal .
For this recipe, you need cookie dough (homemade or store-bought; chocolate chip or sugar cookie dough), marshmallows , graham crackers and chocolate chips—or your favorite chocolate bar , broken into pieces.
Break apart your cookie dough into individual pieces and flatten each piece. Then, smoosh in a piece of graham cracker, half a marshmallow (cut with kitchen shears) and a piece of chocolate. Wrap the cookie dough around the fillings as thoroughly as you can. Put the filled cookies on a parchment-paper-lined baking sheet and bake at 375° for 12 to 14 minutes.
At first, I was skeptical. How good could these really be compared to a classic s'more? Wouldn't the chocolate fall out? Wouldn't the marshmallow burn? I had so many questions! But after a little trial and error and one taste, I knew I had stuck the landing with a really great recipe.
This treat is exactly what it promises: a s'mores -flavored cookie. The larger you make your s'mores cookies, the more opportunity you have to stuff them with all of the great s'mores stuff. Simone Biles ' cookies were chewy from the slightly caramelized marshmallow with chocolatey bits studded throughout. My favorite part was the graham cracker because it reminded me of making gooey s'mores sitting in front of a late summer campfire—but without the sticky fingers.
Smoosh in order. Make sure when you're smooshing the ingredients into the cookie dough, you do it in this order: flattened cookie dough, graham cracker, marshmallow and chocolate. Then, flip so the chocolate side is face down on the baking sheet—or try to wrap up the stuffing as well as you can in the cookie dough. Trust me, I tested out every possible combination and this was the best in terms of ingredients holding up in the oven and preventing them from leaking out of the cookie dough and burning.
Use whatever cookie dough you have on hand. I used sugar cookie dough because it's what I had on hand and I highly recommend it. The subtle sweetness acted as the perfect base for the s'mores mix-ins without knocking out all the others flavors.
Don't over-bake. The longer you bake these cookies, the more likely it is that the marshmallow will ooze out of the cookie dough, caramelize and even burn on the pan.
