    A Faster, Easier, No-Fail Version of the Viral Cinnamon Roll Pancakes

    We recently moved to a new city and after that final day of moving (you know the one- where you're dirty, tired, starving, and too stressed to worry about cooking) we didn't know what to do for dinner. My husband found a little restaurant near us that served all-day breakfast, and that was exactly what I needed. Pancakes are comfort food!

    When we got to the restaurant, I noticed they had a Cinnamon Roll Pancake on the menu, and I had to have it. Cinnamon rolls are one of my very favorite foods, so this was the perfect way to celebrate finally being moved into our new home.

    The pancakes were absolutely amazing and I have gone back several times for them. The issue is that they're $8 a pancake! Granted, they are huge, and did I mention that they're one of the best things I have ever eaten? Still, at that price, I knew I wouldn't be getting them often.

    Recently, one of my favorite content creators, @dzunglewis , shared a cinnamon roll pancake hack on her TikTok account , and I knew I had to try it. I tracked down what I think is the original (made by @homemeide ) and I gave it a go. I learned a couple of things along the way, but in the end, I was able to make a cinnamon roll pancake that tasted almost exactly like the one from that restaurant.

    How to Make Cinnamon Roll Pancake

    In both of the videos above, they start out by mixing wet ingredients, including one egg, milk and oil. Then, they add in the dry ingredients, which are flour, baking soda, and sugar. Whisk all of that until it's blended into pancake batter.

    Then they made the cinnamon sugar filling, which is a mixture of cinnamon, sugar and butter. They both add just a bit of the batter to this mixture to help the swirls "keep their shape." This mixture goes into a resealable plastic bag and you snip the corner to make it into a makeshift piping bag.

    Then, you melt some butter in a pan, scoop the pancake batter into the pan, and as the pancakes is cooking you swirl the cinnamon sugar mix onto it. Because the cinnamon-sugar mixture is prone to burning, you don't flip these pancakes. Instead, you cover the pan with a lid and let them steam for around 5 minutes.

    Homemeide topped her pancakes with some homemade icing and said this is one of her husband's favorite foods. Dzunglewis, however, said the texture was a little weird, but the flavor was good.

    I didn't like this method, and it didn't taste anything like the cinnamon roll pancakes that I spent $8 for. The texture was a little too spongy for a pancake, and the cinnamon swirl was too faint—so I decided to tinker with the recipe a bit.

    After testing the above method, I wanted to try an easier streamlined version. I started by using a store-bought pancake mix. All I had to do was scoop it from the bag and add the required amount of milk (instead of water), no eggs were needed.

    Then, I made a cinnamon filling with cinnamon, brown sugar, vanilla extract and softened butter. I didn't measure this, I just kind of added things in until I felt like it was right. I put the mixture in a resealable plastic bag and used that to pipe it onto the pancakes.

    I cooked the pancakes as you would normally do and dotted the cinnamon-sugar mixture onto the pancakes (I don't have time for swirling, but you can do that, too). I didn't steam them, though. I flipped my pancakes to cook as you normally would and the cinnamon mixture stayed in place.

    Once they were done, I refused to make a homemade glaze because the restaurant near my house uses cream cheese frosting. I just happened to have a can of Dolly Parton Buttercream Frosting on hand, so I used that. Each stack of pancakes got a teaspoon of frosting and a drizzle of syrup.

    These tasted almost exactly like the cinnamon roll pancakes that I have been obsessed with! I made 15 pancakes in 20 minutes, and it took my kids less than five minutes to eat them.

    They were delicious, quick and inexpensive, and we will definitely be making these again.
