    We’ve all seen our fair share of viral egg creations online— crispy feta fried eggs , Jacques Pépin's riff on deviled eggs , the moment when everyone was adding cottage cheese and mustard to their scrambled eggs . The internet has no shortage of tips , tricks and chef-approved methods for preparing one of the most versatile sources of protein known to man. And with the recent viral egg flight trend taking over our feeds and our appetites, it's time for hard-boiled eggs to shine.

    What Are Egg Flights?

    For the unfamiliar, an egg flight is a group of hard-boiled eggs that have been sliced in half and topped with all sorts of ingredients. The use of the term "flight" is a nod to other food and drinks where you're served a small sample of an array of things. You might have had a wine or beer flight or even a toast flight, so it's a similar idea.

    Think of egg flights as a looser, more casual version of deviled eggs . Recipe developer and social media star Alice Choi (aka @hipfoodiemom ) is responsible for turning the internet upside down with her extravagant egg flights, which have been experiencing a resurgence in popularity. In response to a drastic uptick in fan creations being shared, the mother of two and egg flight connoisseur took to TikTok to share some of her favorite “OG egg flight” masterpieces.

    “You might have missed some of the OG egg flights, ‘cause I’ve been doing this for a while,” Choi says to viewers who might be new to her creations. “I wanted to show you some of my favorites.”

    Now we don’t normally advise speeding while driving on public roads, as safety is always of the utmost importance, but Choi’s egg flight creations are absolutely worth rushing to the store to buy eggs today. You may have tried all sorts of devilled egg variations in your lifetime, but what Choi creates is on a different level.

    How To Make an Egg Flight

    For her demonstration, Choi cuts three hard-boiled eggs in half. A dollop of Kewpie mayo is added to each egg half, followed by a squirt of yellow mustard (dijon can be used as well) on just three of the egg halves.

    “This is one of my original egg flight creations that I used to do,” Choi says before continuing, “SO GOOD!”

    Choi adds a spoonful of gorgonzola cheese crumbles atop the two egg halves to the right, followed by a drizzle of balsamic glaze. She then adds sliced bread and butter pickles to the remaining four eggs, dressing the two to the left with Fly By Jing szechuan chili crisp .

    For the remaining two eggs in the center, Choi takes a cobb salad approach, topping each egg with sliced deli turkey meat and some romaine lettuce. She then adds a small piece of sun-dried tomato, noting that she would have used cherry tomatoes, if she had them. Choi switches things up and garnishes the remaining egg with pickled red onion before digging in.

    “We have a lot here, I realize that,” Choi jokes while eyeing the row of hard-boiled eggs in front of her.

    The point of the egg flight is to use what you have (and what you like) to make a fun, delicious snack or a quick and easy lunch. Egg flights are also a fun thing to make for a small dinner party. The best part of all? There are basically no rules when it comes to toppings. And you'll see that's true when you start looking at egg flight variations online, including one by the cucumber king himself, @logan .

    Choi has shared all kinds of egg flight variations, including a take on buffalo chicken salad , BLT ’s and a one-of-a-kind Cheez-it creation .
