When I was a kid, one of my absolute favorite cookies was the Nutter Butter. The peanut butter -flavored sandwich cookie, produced by Nabisco, has an iconic peanut shape and creamy peanut butter filling, and it was even better than Oreos , in my opinion. The peanut butter filling, sandwiched between two crispy, peanut-flavored cookies , gives the cookies a slightly sweet, strong peanut butter flavor and I loved them dipped in milk.

Because of my love for this classic cookie, I was absolutely intrigued when I ran across Copycat Nutter Butter Cookies on content creator @rachlmansfield 's Instagram. It looks so delicious and easy to make, too.

"These are made with 3 ingredients, they’re vegan and gluten-free and give me such nostalgic vibes!!!" Rachel said in the caption to her Instagram post. "I used to have these in my lunch box back in the day when peanuts were allowed at school. I am obsessed with this version and we make these so much."

Rachel said the homemade Nutter Butters are "foolproof and one of those recipes that truly anyone (even those who never bake) can 10000% make." Another reason to love them? The almond flour makes them gluten-free and there's not butter so they're also vegan, which means they're more accessible to more snackers. What's not to love about that?

To make the cookies, you need creamy peanut butter, almond flour and maple syrup. (For the full recipe, head to Rachel's website .)  Mix the ingredients together to make a simple dough and then roll the dough into little balls. Place two dough balls side-by-side on a parchment paper-lined baking sheet. Using a fork, press a cross-hatch pattern in each cookie. Flattening the cookies will push them closer together, creating a Nutter Butter-ish peanut shape.

Repeat the process with the rest of the dough, bake the cookies, let them cool, then sandwich two cookies with some creamy peanut butter. Pour yourself a cup of milk and dig in!

The commenters were out in force as soon as the video dropped. "That makes me sweat! 😂 I love peanut butter," said one person. "My favorite cookie!" added someone else. "I've been craving these," chimed in another commenter.

And we can't blame them. These homemade Nutter Butters seem like the perfect cookie for an after-school snack, a quick weeknight treat or a fun weekend baking project with the kids.
