I’m not sure about you, but one of my childhood dreams was to grow up and become a certified pizzaiolo. Something about watching the care and finesse it took to stretch soft, supple pizza dough into 18-inch rounds with just the tips of your fingers and a few death-defying hoists into the air, really spoke to a deeper part of my soul. It was like watching Michaelangelo paint the Sistine Chapel.
