    The Viral Recipe That Has Us Rushing Out to Buy Broccoli

    Out of all the vegetables out there, broccoli probably has the worst reputation. How many times has a movie or TV show portrayed a child hiding their broccoli under their napkin or looking grossed out by the sight of the mini trees? (Looking at you, Inside Out !)

    Broccoli gets a bad rap because, depending on how it's cooked, it can be bitter and/or mushy, neither of which make for a great eating experience. Roasting, stir-frying or seasoning broccoli with herbs and spices can greatly improve the flavor and texture, but we recently saw a way to make broccoli that seems like it would be a win no matter who's at the table.

    SMASHED CRISPY PARMESAN BROCCOLI 🥦 Having a roast today? Fancy trying out a new side dish? Try my smashed crispy parmesan broccoli 🤤 • Cut and boil your broccoli for roughly 10-15 minutes, until it's slightly soft, drain then leave one side. • Drizzle some oil on baking paper and sprinkle on some seasoning. I used oregano, garlic, pepper, salt, cumin, paprika and all purpose seasoning. Also add parmesan. • Place the broccoli on top and smash it! Use something flat, I used the bottom of the glass. Add extra parmesan and seasoning. • Cook in the oven or air fryer at 185°C for about 15-30 minutes depending on how much you've cooked. You want to cook them so they are just slightly crispy and to your liking. So keep an eye on it while it's cooking. • Remove from the tray and add as a side with your roast dinner, on it's own or as a side with any meal.     How to Make Smashed Parmesan Broccoli

    This recipe is similar to the smashed Parmesan potatoes and smashed Parmesan carrots that have made the social media rounds . We're always and forever here for a smashed vegetable coated in cheese, though!

    For the broccoli version, you'll need broccoli, olive oil, oregano, garlic, pepper, salt, cumin, paprika, all-purpose seasoning and Parmesan, though you can customize the seasonings to fit your pantry and/or palate. Cut the broccoli into bite-size florets and boil until tender. Drain the broccoli and let it dry while you mix all of the seasonings and the cheese in a bowl.

    Drizzle some oil on a parchment-lined baking sheet and sprinkle on the seasoning. Place the broccoli on top and smash it with something flat, like the bottom of the glass. Add more Parmesan and seasoning on top. Bake or air fryer until crispy, which should take about 20 minutes in the oven. We can't wait to serve these crispy bites for a fall dinner and we're definitely keeping this one in mind for Thanksgiving too.

Broccoli is in the same family as Brussels sprouts , and we enjoy making a similar recipe with those. "This with some steak bites and mashed potatoes," another person said. That would be an amazing dinner! "Might try. Also might add bacon," someone chimed in. Bacon does make everything better !
