New downtown restaurant Sabor & Sazon celebrates grand opening

– Sabor & Sazon, the newest restaurant opening in downtown Paso Robles, held its grand opening on Aug. 23.

It’s located at 841 13th Street, the former home of Vic’s Cafe.

“For our grand opening, our goal is to establish ourselves as the benchmark for exceptional food and service. We aim to showcase the quality and innovation that set us apart,” says owner and executive chef Jorge Magdonal, who has been a chef for 15 years. “Additionally, we hope to expand our guests’ horizons and taste buds with a dining experience that delights and inspires,” adding, “every dish served is a testament to years of hard work, the pursuit of perfection, and the joy of sharing those accomplishments with others.”

The restaurant’s motto is “el sazón es nuestra esencia”, which translates to “seasoning is our essence”. They aim to give back to the community through high-quality dishes and a joyful dining experience.

“Opening a restaurant has always been a cherished family dream, fueled by a deep passion for food and cuisine. The journey is rooted in a desire for self-improvement and success, with a vision to share the same flavors and love that have nurtured our family with the community of Paso Robles. We aim to enrich this small town by creating a dining experience that resonates with the warmth and authenticity that has defined our family’s traditions,” Magdonal said.

The menu has various cultural influences, including from the family’s roots in Honduras. Some of the appetizers include the corn soufflè, which is atop a parmesan fondue sauce, and the pastelitos, filled with beef and tomatoes. Entrees include grilled salmon with vegetables, fish tacos bandeja paisa, and paella. Fresh salads, such as quinoa and grilled vegetables, and pasta dishes, such as fettuccine ragú and clam linguine, are also on the menu.

The dessert menu includes tarta de ricotta, made with cocoa and espresso, crème brûlée, and flan de coco. Cocktails available are spritzers, such as peachy peach and passionfruit, and sangrias, mojitos and mimosas.
