Novel Ice Cream Working on New Site at Axiom Church; Possibly More on the Way

Novel Ice Cream , one of Phoenix’s favorite ice cream shops, is working on a new location near Downtown Peoria at 8295 W Jefferson St.

The company, led by CEO Shawn Allard , recently submitted a design review to the city of Peoria to add an approximately 200-square-foot trailer to Axiom Church . Allard tells What Now Phoenix that Novel Ice Cream is not replacing Driftwood and is working with the coffee shop to improve the community. The new Novel Ice Cream trailer is expected to open around the end of July , maybe the beginning of August , according to Allard. An official opening day will be announced on the company’s Instagram.

“Our team is focused on serving texture-driven, small-batch handcrafted ice cream, and our award-winning ice cream stuffed donut,” according to the company’s website. “Our ice cream is made in two pans at a time with renewed attention to flavor, texture, and toppings. Our ice cream chef develops each recipe specifically for each individual flavor and the integrity of our ingredients is never compromised with additives or processed stabilizing. With this hands-on approach, Novel’s mission is to change the way our communities eat and feel about this nostalgic treat by giving ice cream lovers an entirely fresh experience. Our community-driven team is built to bring people together one Dough Melt at a time.”

Novel Ice Cream has become an Arizona staple since founders Brandon Douglas and Kailey Foxcroft opened on March 15th, 2017, inside a 250-square-foot cottage in Phoenix before expanding to a second location in Downtown Mesa. Eventually, Shawn Allard took over and hopes to double the company’s footprint. The new food truck appears to be the first of two upcoming locations for the company, as Allard has provided updates regarding Novel Ice Cream on his LinkedIn. The update mentions other plans from the emerging entrepreneur, so watch out for what’s to come next, including possibly a new food hall.

“Novel Ice Cream: We’re in our busy season right now. Both shops are poppin’,” Allard said via Linkedin a few months ago. “I’ve got the lease in my inbox for location 3. Once I get that signed, we’re ready to go. The buildout process is grueling. Especially for someone who likes to move quickly. But it’s out of my control. Novel #4 is on pause. The current tenant had a change of heart last weekend and is rethinking whether they want to leave the space or not. I know we’ll get this one done. Just a matter of time.”
