Nedley’s received critical violations for failing to segregate different foods properly to prevent cross-contamination and noncritical violations for failing to maintain a litter-free environment. The health department inspects food-service operations one to four times a year, with frequency depending on menu complexity and the potential for food-borne illness. Identification of significant problems results in department staff conducting follow-up inspections and instructing staff on proper food-safety procedures during each visit, Beth Peery, the department’s public health information and education manager, said in an emailed statement Friday. <nbtemplate data-id="AdPlaceholder" data-content="JTdCJTdE"></nbtemplate> Persistent problems can result in the business owners being called in for a pre-administrative meeting during which an agreement is reached about steps to avoid legal action, she said. If a food establishment does not comply with that agreement, then an administrative hearing is held during which the Board of Health may suspend its license, Ms. Peery said. Licenses may be reinstated upon satisfactory facility reinspections by the health department’s environmental health staff, Ms. Peery said. The restaurant mostly employs high school and college students working part time, and has no full-time manager because she can’t afford one, Ms. Wisniewski said. “It was my own stupidity that this happened,” Ms. Wisniewski said. “I’m zipping in and out. I’ll frequently come in and be there in the evenings as they’re closing but not every single night.” Ms. Wisniewski said her employees have access to health-safety checklists about which she also plans to speak with her employees. “Whenever we first opened, we had a manager in place,” Ms. Wisniewski said. “Whenever she retired, I was using someone as a point person and communicating with them. I was spending a lot of time there but my kids were little then.
