A local chef is reimagining the limits of the eggroll, and Phoenixville will soon be able to savor her vision. Madi McShane, the brain behind Madi’s on a Roll, will be introducing the unique concept to the neighborhood, reports local media outlet Main Line Today.

McShane will be bringing her eclectic blend of eggrolls to 313 Bridge Street this summer. McShane and her husband and business partner, Brian McShane, are looking forward to moving into the neighborhood, which played an instrumental role in the business’s development. “Phoenixville has a special place in our heart because that was the first farmer’s market that we ever joined; it was where our business took off.” she states. “It was the first place we had the opportunity to sell our frozen eggrolls. Phoenixville was the first place a couple years ago that we tried to get a store at and we couldn’t find a kitchen space that had a retail space to it. We’ve always had Phoenixville on our radar.”

The McShanes began pursuing a second location, hoping to take full advantage of the large kitchen in their Exton store. McShane explains: “We started looking a couple of months ago in Phoenixville. When this opportunity fell into our lap, it was a now or never thing, whether we were ready for it or not, it was happening. Phoenixville was the perfect spot, the perfect amount of square feet, the perfect rent, the perfect everything. It made sense.”

While customers can look forward to the same high-quality product they’ve come to expect from Madi’s on a Roll, the new location will expand on the concept’s offerings. McShane states “We plan to do more appetizer-based things beyond eggrolls; we really want to offer eggrolls, home-made dips, homemade eggroll chips…we want to sell some gluten-free crackers while we wait for a gluten-free eggroll wrapper to come out, which we’re working on. We don’t have the same amount of foot traffic in Exton, to offer these things.”

Madi’s offers customers a dining experience that is as convenient as it is delicious. McShane explains what future patrons can look forward to, stating: “They’re all hand-rolled, filled with homemade fillings. We offer online pre-orders….We offer up to 30 different flavors, from cheese steak to buffalo chicken to bacon, egg, and cheese to apple pie. They’re the perfect food for hosting, for a quick on-the-go meal, they’re perfect when you want a snack or are down at the beach.”

Phoenixville residents can look forward to bringing Madi’s cuisine home relatively soon; the McShanes are aiming for a first weekend of August opening.

Madi’s on a Roll is a concept ripe for expansion and overflowing with potential. McShane is weighing all of the options, stating: “I get overwhelmed at the amount of opportunities we do have. We could wholesale, we could online ship, we could open up food trucks, but where my heart is, I would love to franchise one day…When I envision this, I envision a fun, unique brand that’s nationwide, with a focus that’s on making more of a local impact-opening stores through Chester County, Delco, Montco, maybe Philly…Right now I’m working in the business instead of on the business-I have all these ideas and I would love to push those ideas out and let other people run with them.”

However, for now, the McShanes are committed to successfully launching their latest venture, and providing the residents of Phoenixville with a fun and distinctive dining opportunity. As McShane states: “There’s always an opportunity to eat eggrolls!”
