    Copycat O'Charley's Loaded Potato Soup Recipe: Simple & Delightful!

    Ingredients:

    3lbs of Yellow Potatoes (diced)

    8 Slices of Bacon

    1/4 Stick of Salted Butter

    1/4 Cup of Flour

    4 Cups of Chicken Broth

    4 Cups of Heavy Whipping Cream

    7 Cups of Whole Milk

    16oz of Velveeta Cheese

    2 1/2 Cups of Shredded Cheddar Cheese

    1 Teaspoon of Salt

    1/2 Teaspoon of Ground Black Pepper

    2 Teaspoons of Garlic Powder

    Directions:

    Peel, wash and cube your potatoes and place them in a large pot, pour in your chicken broth over the potatoes. Boil the potatoes in the chicken broth for around 10 minutes.

    In a large skillet, cook your slices of bacon over medium heat for around 8 minutes or until the bacon becomes very crispy. (Be sure to flip the bacon to allow to bacon to fully cook through.)

    Once the bacon is done, place the bacon slices onto a papertowel covered plate.

    Return to the skillet that you just cooked your bacon slices in and be sure to keep 1 tablespoon of bacon grease inside of the pan. Place your butter in the skillet and allow the butter to melt then once the butter is melted, add your flour into the skillet and whisk until the mixture is smooth.

    Add whole milk, Velveeta cheese, heavy whipping cream into your stock pot with your chicken broth and diced potatoes. Stir well. Add the butter and flour mixture and mix well. Once this mixture is completely melted, whisk the mixture for around 15 minutes to combine all of the ingredients.

    Add your salt, garlic powder and pepper to the soup mixture. Stir the seasonings into the soup.

    Cover the pot and cook on low for 30 minutes.

    In the meantime, while you are waiting for the soup to finish cooking, finely chop your bacon and chives and shred some cheddar cheese to garnish the soup with.

    Serve the soup in bowls and enjoy!
