    Cornet Custard Plans to Open a Brick-and-Mortar Location

    According to a recent article from Oregon Live , Cornet Custard will soon open its own space at the old Woodsman Tavern.

    A representative of Cornet Custard was not able to provide much more information at this time per What Now Portland’s request.

    Mika Paredes, one of the owners of Cornet Custard, stated that the opening date is not locked in yet, as they still have a few moving parts such as the renovation of the space to tackle. For now, Cornet Custard still resides inside Colibri.

    Oregon Live’s article provides a bit more information, stating, “Cornet didn’t break big, but it quickly rose to cult-favorite status. And when Ripe announced its upcoming closure in late 2022, hardcore fans flocked to the restaurant market’s freezer case to hoard last-chance pints. But Cornet didn’t disappear completely. Pints — and weekend-only scoops — have been sold at Colibri flower shop in Northeast Portland since last year.”

    According to Cornet Custard’s website , “Cornet Custard is the wild, inspired child of Mika Paredes and Naomi Pomeroy of Beast restaurant fame. After working together on and off since 2004, the pair came back together post-pandemic at the short-lived (but much-adored) Ripe Cooperative.”

    “There at Ripe, Mika got to work creating the RICHEST, MOST LUXURIOUS Frozen Custard ever known — with 12 egg yolks in every quart— inspired by CLASSIC FLAVORS using old-fashioned methods and the VERY BEST INGREDIENTS.”

    “Each batch of Cornet Custard starts in a stand mixer, whisking egg yolks and pure cane sugar together until billowy thick ribbons form, and is hand tempered with a mixture of hot milk and cream, returned to the stove and cooked to a thick custard. After incredible flavors, fruits, etc. are added, its all churned through an unparalleled gelato maker we retrieved directly from Italy.”
