    Pasta Is An Essential Food Group: Here's how to Make It

    Learning to make homemade pasta was kinda life changing.

    First of all, my husband thought he didn't like pasta. Turns out he just doesn't like the flavorless flour and water kind of dry packaged pasta. Now that we only eat homemade pasta, it's one of his favorite foods and we eat it all the time.

    Second, homemade pasta is so much better for you than the dried packaged kind you buy at the store. The recipe I use includes a LOT of eggs making it high in protein and essential vitamins.

    And, I know I'm mentioning this last the MOST important reason to make homemade pasta:

    It tastes better.

    Like so, so, so, much better.

    The trick is to use a process that allows you to easily incorporate homemade pasta into your week. Making homemade pasta doesn't have to be a whole thing.

    Pasta night can still be as easy as boiling some water. Here's what you do:

    1. Prepare the dough. I usually do this on Sunday when I'm also doing other food prep stuff for the week. Making the dough will take about 15 minutes, max. Wrap it up and pop it in the fridge.
    2. I day or two later, pull the pasta from the refrigerator and use a pasta machine to roll it out and cut it into noodles. Hang the noodles to dry overnight. Cutting the pasta will take roughly 20 minutes.
    3. When the pasta is dry, package it into ziplock bags or another airtight container and store it in the pantry.

    Now that the pasta is prepared and dried, it's ready when you are. 👏

    Creamy mushroom pasta - Love is the way I feel about this plate full of creamy, cheesy, saucy, perfectly cooked pasta and roasted mushrooms topped with plenty of cracked pepper and fresh herbs.

    Brown butter sauce pasta with bread crumbs - This is the kind of meal you allow yourself to really truly need on those days when pasta and butter sauce might actually be the answer.

    Butternut squash pansotti with brown butter sage sauce - Roasted butternut squash stuffed pasta, drenched in brown butter sage sauce, and topped with toasted pumpkin seeds and garlic chili oil.

    The combination is nothing short of pure, unadulterated bliss. And if you think I'm exaggerating, try them and find out for yourself.

    Pasta bolognese - Meaty, rich, slow simmered bolognese sauce is one of the world's all-time greatest comfort foods.

    This recipe with bacon and red wine is my favorite way to make this delicious classic Italian sauce.

    Miso buttered pasta with salmon - Pasta tossed in a silky miso butter sauce, with sautéed shiitake mushrooms, bitter greens, and miso roasted carrots, then topped with flaky sugar and spice coated salmon.

    The best part? This elegant, umami rich meal comes together in about 35 minutes.
