    Nashville Coop’s new Richfield restaurant opens

    After announcing plans for a third location in January, Nashville Coop is finally ready to open its next chicken-centric hub.

    Brothers Arif and Kamal Mohamed founded the company in 2020 as a food truck , converting one of their family's pre-existing trucks to the new concept. It quickly became a sought-after mobile kitchen, in part because of the love for its Sammich, a fried chicken sandwich with Ethiopian spice blends that diners can customize through five levels of heat, from Minnesota Nice (no heat) to Cluckin' Hot, which it categorizes as "24 hour pain."

    From there, it grew rapidly. In just four years, it has expanded to brick-and-mortar restaurants in Richfield, Minneapolis ' Stadium Village, and Snelling Ave. in St. Paul . It also briefly had a restaurant in Rochester co-owned by former Minnesota Viking cornerback and punt returner Marcus Sherels . That location closed in September .

    At the time it revealed Richfield would be its next outpost, Nashville Coop teased another possible suburban hub. "Oh and Eagan ... we definitely see you!" it wrote in the announcement. However, the chicken-loving restaurant has not publicly announced plans to open in Eagan.
