Today, I'm sharing with you a beloved quick bread recipe: Amish Cinnamon Bread. My neighbor shared this recipe with me, demonstrating the Amish warmth and hospitality. This recipe is simple, full of cinnamon flavor, and delicious. It has a soft, moist crumb, as well as swirls of cinnamon sugar. It's the perfect bread for breakfast, dessert, or an anytime treat. I always double this recipe and make at least two loaves, one to eat immediately and one to freeze for later.

    Ingredients:

    • 1 stick of softened butter
    • 1/2 cup sugar
    • 1/2 cup brown sugar, lightly packed
    • 1 egg
    • 1 1/2 tsp. pure vanilla extract
    • 1 cup of buttermilk
    • 2 cups of flour
    • 1 tsp. baking soda

    Cinnamon Sugar Mixture

    • 1/3 cup sugar
    • 2 tsp. cinnamon
    • 2 tbsp. melted butter

    Directions:

    1. Warm the oven to 350ºFahrenheit. Lightly grease and flour a 9" x 5" loaf pan.
    2. Using a stand mixer with a paddle attachment, add in your softened butter, brown sugar, and granulated sugar. On medium speed, beat until light and fluffy. It should take around 3–4 minutes.
    3. Next, add in your egg, pure vanilla extract, and buttermilk. Continue at medium speed until well incorporated.
    4. Next, combine your flour and baking soda and sift them into your bowl. Mix until it just comes together. Ensure to break up and combine any large lumps.
    5. For your cinnamon sugar mixture, combine your granulated sugar and cinnamon.
    6. Take your prepared loaf pan and place 1/2 of your batter in the pan. Sprinkle 1/2 of your cinnamon sugar mixture over the top and swirl with a butter knife or chopstick.
    7. Next, add your remaining batter, evenly spread it out, sprinkle with the remaining cinnamon sugar, and swirl again.
    8. Add your melted butter over the top of the loaf and place your cinnamon bread into your warmed oven until your cake tester or toothpick comes out clean. It should take around 55–70 minutes, depending on your oven.
    9. Let your bread cool in the loaf pan for 15–20 minutes. Let the loaf cool completely before storing or wrapping it.
