    This 7-layer salad is a timeless classic, reminiscent of my family gatherings. My grandmother lovingly passed down this vintage favorite, which features a wonderful combination of fresh veggies, crispy salty bacon, and a delightful creamy parmesan dressing. Each layer contributes to a colorful, flavorful dish that not only looks impressive but also tastes incredible. This salad is a hit on any occasion, just like my grandmother made it for our family gatherings.

    You can mix and match your veggies, adding in all your favorites, with your choice of cheese. This makes a lot of salad, so it's the perfect dish to bring to your next potluck. This salad is delicious with some fresh grilled chicken pieces, transforming it into a light meal. It's so simple to make, and visually, it's stunning. Just layer your veggies and add your crispy bacon and dressing. You can make this salad up to 24 hours in advance. Any longer, and your salad will be soggy.

    Ingredients:

    • 1 pound of bacon
    • 1 large head of iceberg or romaine lettuce
    • 1 large onion, finely diced
    • 2 C. of fresh peas or frozen (make sure they have been thawed)
    • 1 1/2 C. of shredded cheese (I like cheddar)
    • 1 1/2 C. of finely chopped cauliflower or broccoli
    • 1 1/3 C. of scallions, finely sliced

    For the dressing:

    • 1 1/2 C. of mayonnaise
    • 1 C. of freshly grated Parmesan cheese
    • 1 1/2 tbsp. granulated sugar

    Directions:

    1. Add your bacon to a large skillet and cook until browned and crispy. Remove from the skillet and drain on a paper towel. Crumble your bacon once it has cooled.
    2. For your salad, wash your veggies and lettuce and pat them dry (or use a salad spinner). Chop or tear up your lettuce and place it in a large glass dish. Begin to layer your salad with onions, fresh or defrosted frozen peas, broccoli or cauliflower, your choice of cheeses, crispy crumbled bacon, and scallions on top.
    3. In a small bowl, combine your mayo, parmesan cheese, some freshly ground pepper, and sugar. Whisk until combined. When you're ready to serve, pour over your salad. Keep your salad chilling in the fridge until you are ready to eat.
