    • Grate your zucchini, leave the skins on, and then use a cheesecloth to drain out the water.
    • Fresh is always best! Hit up your local farmers market for the best zucchini. Those extra-large football-size loafs are perfect for this quick bread!
    • Feeling sassy?? Add in some chocolate chips or peanut butter chips; pecans and walnuts are also fantastic.
    • Insert a toothpick in the center to test your bread, and if it comes out clean, it is done.
    • I like to double this recipe, resulting in four glorious loaves of bread. It freezes well, and this quick bread is always a requested treat in my house!

    PREP TIME: 10 mins.; COOK TIME: 1 hr.; TOTAL TIME: 1 hr. 10 mins.; SERVINGS: 10 large slices

    Ingredients:

    • 2 C. of flour
    • 2 1/2 tsp. cinnamon
    • 1/2 tsp. salt
    • 1.5 tsp. Baking soda
    • 1/2 C. vegetable or canola oil
    • 3/4 C. Granulated sugar
    • 3/4 C. lightly packed brown sugar
    • 4 Eggs
    • 2 tsp. Pure vanilla extract
    • 1/2 C. sour cream
    • 3 C. grated zucchini (strained through cheesecloth)

    Directions

    Warm your oven to 350 degrees Fahrenheit. Get two 9-inch loaf pans. Grease and flour your loaf pans generously, then set them aside.

    In a medium-sized bowl, add your flour, cinnamon, baking soda, and salt. Whisk to combine. Place to the side.

    Using a hand or stand mixer on medium speed, add your granulated sugar, vegetable oil, and large eggs. Beat for 2–3 minutes until fluffy. Then combine your sour cream, vanilla, and grated zucchini.

    Add in your dry ingredients, mix together, and pour into your prepared 9-inch pans. Place it in the middle of your oven and bake for 45–50 minutes. Oven temperatures vary, so keep an eye on your loaves.

    Allow to cool on a wire rack for about 10 minutes, then remove and allow to continue cooling, or serve with a little butter on top!

    Anyone else have trouble using baking soda? Ugh I always taste it. I cut back on it in zuc bread but lands Flat lol
