    To Peel or Not to Peel - Really, it just comes down to personal preference.

    Peeling Peaches:

    It's pretty simple to do; you can either blanch your peaches or remove them with a paring knife.

    1. Blanching Method: Score a small "X" at the bottom of each peach. Drop the peaches into boiling water for about 30 seconds, then immediately transfer them to an ice bath. Once cooled, the skins should slip off easily.

    2. Paring Knife Method: Use a sharp paring knife to gently peel the skin, starting from the top of the peach and working your way down.

    Ingredients:

    Crisp Filling:

    • 10 C. of sliced peaches (peeled or unpeeled, your choice)
    • 1/2 C. flour
    • 1 C. sugar
    • 1/4 tsp. salt
    • 2 Tbsp. lemon juice
    • 2 tsp. vanilla extract

    Crisp Topping:

    • 1 C. light brown sugar (lightly packed)
    • 1 1/3 C. flour
    • 2 rounded tsps of ground cinnamon
    • 1/2 tsp salt
    • 2 sticks of unsalted butter (needs to be very cold and cubed)
    • 1 1/3 C. old-fashioned oats
    • 1 1/3 C. nuts (pecans, almonds, or walnuts) optional

    Directions:

    Warm your oven to 350°F. Grease a 9 x 13-inch pan with nonstick spray. Place to the side.

    For your crisp filling: add all of your crisp filling ingredients (peaches, sugar, flour, salt, lemon juice, and vanilla) into a large bowl and stir to combine. Once you have combined everything, pour it into your prepared 9 x 13 inch pan.

    For your crisp topping: combine your brown sugar, flour, cinnamon, and salt in a bowl. Using forks, knives, or a pastry cutter, cut in your very cold chunks of butter. Do this until your mixture is crumbly (pea-sized).

    Once your butter has been cut in, gently stir in your oats and nuts (if using), then sprinkle over top.

    Place your crisp in your preheated oven and bake until the topping is golden brown and bubbling at the edges. It should take around 50-55 minutes, but begin checking at the 40 minute mark as all ovens are a bit different. Once done, remove from the oven and serve! This crisp is delicious, hot, warm, and even cold!
