    Say helllllo to Oprah's Favorite Cookie Recipe—well, at least that’s what I’ve heard! Now, before you ask, no, I don’t have Oprah’s cell number to confirm it (trust me, I’ve tried!). But what I can confirm is that these cookies are a delicious treat you’ll want to make again and again. They are perfectly chewy in the middle with crispy edges and the delightful crunch of toasted pecans. These cookies have over-the-top personality. They are super simple to whip up, using pantry staples you probably already have on hand. Honestly, whether Oprah’s truly a fan or not, after one bite, I’m pretty sure you will be!

    This recipe makes a large batch of cookies (60 delightful cookies). So, in true Oprah fashion: you get some cookies and you get some cookies — everyone gets cookies! If you are looking to make less, just cut the recipe in half; otherwise, pack them up and share with your co-workers, friends, and family!

    Time: 20 minutes; Yield: 60 cookies

    Ingredients:

    • 1C. shortening
    • 1 C. of butter (2 sticks) 
    • 2 lb. box of brown sugar 
    • 4 large eggs 
    • 5 C. all-purpose flour
    • 1/2 tsp. salt
    • 1 tsp. baking soda
    • 3 tsp. vanilla extract
    • 2 1/2 C finely chopped toasted pecans

    Directions:

    Warm the oven to 350 degrees Fahrenheit. Add a layer of parchment paper to two or three cookie sheets. 

    Using a stand mixer, add your shortening and butter. Mix on medium speed until creamed.

    Slowly begin to add your brown sugar. Ensure to thoroughly blend each addition. Once you've incorporated all the brown sugar, proceed to add your eggs and pure vanilla extract.

    In a medium-sized bowl, sift together your flour, salt, and baking soda. 

    Begin adding flour to your batter on low speed. Reduce the speed of the mixer to medium-low.

    Remove your bowl from the stand mixer and stir in roughly chopped toasted pecans. 

    Drop the dough by the teaspoonful onto your parchment-lined cookie sheets (about 2 inches apart). 

    Add your cookie sheets to the oven and bake until just set, 8-10 minutes. 

    Remove from the oven and allow to cool for a few minutes, then serve.

    Personally, I could care less what Oprah likes or loves. I don't respect her. Just my opinion and I'm allowed it!!
