This hearty, creamy soup is so simple to make, with its rich, chunky texture offering layers of flavor in every bite. There is nothing better than bite size chunks of Smokey ham, bite sized tender potatoes and fresh sweet corn creates. This trifecta of deliciousness creates a balanced and satisfying meal that's perfect when paired with crusty bread and a fresh salad. The best part? Leftovers reheat beautifully, making it an ideal choice for easy, flavorful weekday lunches.

    To make this chowder your own, try incorporating a few options. Can you say bacon ?!?! Cook 6-8 strips of bacon, crumbling them, and sautéing the vegetables with some of the bacon grease for added depth (just reduce the amount of butter you are using). To top the soup, use the crumbled bacon as a crunchy garnish. If you're looking for a low-carb version, replace the potatoes with cauliflower for a lighter twist without sacrificing that creamy texture. Frying the ham until slightly crispy before adding it to the chowder brings a delightful savory bite. Freshly shredded cheese and diced green onions over the top is a wonderful finish for this soup.

    Preparation Time: 15 minutes; Cook Time: 25 minutes; Total Time: 40 minutes; Servings: 10

    Ingredients:

    • 6 tbsp. butter
    • 1 large onion, diced
    • 6 diced carrots
    • 4 stalks diced celery
    • 6 cloves minced garlic
    • 3-4 sprigs of fresh thyme
    • 1 tsp. of dried parsley
    • 1/2 C. flour
    • 4 C. Chicken broth
    • 4 C. Half and half (you can substitute with whole milk)
    • 3 lbs. red skin diced potatoes
    • 16 oz. Diced ham
    • 4-5 cobs of corn (around 2 1/2 cups)
    • Kosher salt and freshly ground pepper to taste
    • Shredded cheese and green onions (optional for garnish)

    Directions:

    1. In a large saucepan, add your butter to the pan over medium heat and toss in your onions, carrots, and celery. Cook until bite tender, around 10 minutes.
    2. Next, add in your minced garlic and cook until fragrant—around 1-2 minutes.
    3. Cut your corn off the cob and toss it into your pot. Stir to combine.
    4. Sprinkle the flour over your veggies and cook for about 3-4 minutes.
    5. Next, pour in your chicken broth and stir. This will help to deglaze the pan. Add your fresh thyme and parsley.
    6. Then slowly add in your milk and stir to combine. Add in your potatoes and bring to a boil, then reduce the heat to a low simmer until they are tender and cooked. It should take around 10–15 minutes.
    7. Add your chunks of ham. Once everything reaches the right temperature, add salt and pepper to season.
    8. Add shredded cheese and a sprinkle of green onions over the top (optional but delicious).
