Skip the Fryer: These Easy and Delicious Baked Chicken Chimichangas Will Change Your Dinner Game

A chimichanga is a deep-fried burrito, commonly filled with a mixture of meat, beans, and cheese, and often topped with sour cream, guacamole, or salsa. However, these baked chicken chimichangas offer a healthier, faster alternative to the traditional fried version. You can still achieve a crisp, golden tortilla by baking them while cutting down on the excess oil, fat, and calories. These baked chimichangas are not only delicious but are also simple to customize to your liking. You can add beans, rice, or extra cheese to suit your preferences, making them a versatile dish perfect for family dinners or meal prep. Pair them with yellow or Spanish rice, and you've got a quick, filling, and satisfying meal.

    ProTips:

    1. Brush the chimichangas with a light coat of canola oil or melted butter before baking to help them crisp up.
    2. Use leftover or rotisserie chicken to save time and give the filling a rich, savory flavor.
    3. Make sure to shred your cheese and avoid using prepacked shredded cheese. It will melt much better.
    4. This recipe makes 8 chimichangas, so it's perfect for feeding a crowd or for making extra to enjoy later. They’re a wonderful addition to your meal rotations because they’re so simple to prepare, customizable, and freezer-friendly.

    • 1 1/2 cups of cheddar cheese shredded
    • 4 green onions, chopped

    7. Place your chimichangas into your preheated oven and bake until golden brown. It should take around 20–25 minutes.
    8. Remove from the oven and garnish with your choice of cheese, sour cream, guacamole, salsa, etc.
