    This Amish Friendship Soup Mix Is Shelf Stable, Easy, And Perfect For Busy Weeknights Or As Gifts

    Amish Friendship Soup is one of those things you can make a ton of now, and for cheap. What you do with them is up to you! You can save them for a busy weeknight, in your prepper pantry, or give them away as gifts to friends and family. It's essentially a meal in a jar, ready to go. It's made from a variety of dried beans, pasta, and seasonings, all of which store well in a canning jar for later.

    This recipe makes two quart jars.

    The ingredients below are the total of the items listed. They are then to be split between TWO QUART JARS. For example, 1 cup of dry split peas should be 1/2 cup in each jar.

    Ingredients:

    • 1 cup dry split peas, rinsed
    • 1 cup dried lentils, rinsed
    • 2/3 cup beef bouillon granules
    • 1/2 cup pearl barley
    • 1/2 cup dried minced onion
    • 1/4 cup dried minced garlic
    • 4 tsp. Italian seasoning
    • 1 cup long-grain rice
    • 1 cup small pasta, ditalini or tubetti

    This is for the jar for storage or gifting. The next part is for cooking the soup. This recipe makes enough to feed a very hungry family with leftovers to boot!

    • 1 pounds of hamburger, turkey, or venison
    • 3 qts. of fresh water
    • 1 28oz can of undrained fire roasted tomatoes

    Directions:

    1. In a quart canning jar, layer the first nine things in order, with macaroni on top. Seal it with a new canning lid.
    2. Write out or print the rest of these directions and put them in or on your jars. This is necessary wheather it's a gift for someone else or for you. No one wants to go digging for instructions later!
    3. Remove pasta as best you can from the top of the jar and set aside. This is because all of the legumes and rice take longer to cook than the pasta, you'll be adding this back in later.

    Cooking instructions:

    1. In a stock pot, cook your meat to brown and drain it. Return it to the pot.
    2. Add your filtered water, your soup mix (MINUS the pasta) in a jar, and your canned tomatoes, and stir.
    3. Bring to a boil, reduce heat, cover and simmer for 45 minutes.
    4. Add the pasta back in and simmer for 20–25 minutes or until everything is tender and delicious.
