Homemade Italian Penicillin Chicken Noodle Soup Is More Than Just Comfort Food: It's Legendary

It's baaaaaaack. You know what I'm talking about. The time where the communal germs spread crud and runny noses from one household to the next like wildfire. The best thing you can to is make a hot, steamy bowl of penicillin soup to help fight off those pesky infections!

This soup has been around in some form or another for centuries and goes by several recipe names, including natural penicillin, antibiotic soup, and Mother Nature's penicillin. This recipe for penicillin chicken soup has an abundance of vitamins and minerals that help treat your symptoms or perhaps prevent symptoms from coming in the first place!

A mineral- and collagen-rich bone broth in place of regular chicken stock is the base. It gives the soup a nutritious quality and depth of taste. The addition of black pepper and turmeric gives this recipe a robust, delicious, and rich broth that doubles as an anti-inflammatory as well as a pain reliever. It's full of protein, vitamins and minerals, electrolytes, and collagen.

Herbs and their jobs in this recipe:

Thyme: is antiviral, antibacterial, anti-inflammatory, and an antioxidant.

Black pepper: It has antioxidant and anti-inflammatory properties. It's also excellent for relieving pain, congestion, and cough, as well as aiding in the absorption of other nutrients like turmeric.

Sage: Even against more resistant germ strains, it is a strong natural antiviral and antibacterial agent. Antioxidants and anti-inflammatory properties too.

Turmeric: An effective anti-inflammatory, antioxidant, and analgesic.

Garlic: An antitoxin and super antibacterial that can even fight off powerful viruses and bacteria like e. coli, staph, and streptococci.

Certain veggies, such as the beta-carotene in carrots and certain salts in celery that can help you stay hydrated, include vitamins that can aid in the body's healing process.

Making bone broth is the first step in making this variation of antibiotic soup. Although it's simple to make, bone broth requires some time. Yes, you can also buy bone broth. Keep in mind they add stuff to that commercial broth, but it's better than using just stock or regular broth.

    Recipe for Bone Broth

    • Preheat the oven to 350 degrees.
    • Put a whole chicken into an oven safe pot with a lid, add some salt.
    • Cook for around three hours, or until the meat and skin start to come away from the bone.
    • After removing the whole chicken from the oven, allow it to cool so you can handle it.
    • Remove and save all of the chicken's meat.
    • Pour water into a crock pot with the bones and ¼ cup of apple cider vinegar (this leeches the minerals from the bones and puts them into the water.)
    • Cook for a minimum of three hours or up to three days on high. Keep an eye on it and add water if it starts to get too low.

    OPTIONAL

Mushrooms! Add your favorite mushrooms to the soup. I recommend fresh or powdered mushrooms like reishi, chaga, or even turkey tail to add a super healthy punch of adaptogen power! Adaptogens support our bodies' ability to rebalance and cope with stress, and they are also excellent for your immune system.

You can also add lemon juice to your soup for an extra vitamin C kick.

    Directions

Fill a medium-sized saucepan with the carrots, celery, and onions and a dash of EVOO. Stir them around until they start to soften.

Add your fresh bone broth and bring to a simmer on medium.

Add the garlic, thyme, rosemary, salt, and black pepper. Simmer for an additional thirty minutes or until the vegetables are tender.

Add your mushrooms, tumeric, and noodles; cook for another 8-10 minutes until noodles are done.

    Add your cooked chicken.

    Serve hot and enjoy!

If you want this to taste more amazing than it already does, pop by your local farmers' markets and purchase one of their stew hens. Some farmers will have the necks and feet available for bone broth.
