Thai food is exceedingly popular in Portland and there's no shortage of Thai restaurants to chose from. Thai food appeals to even the pickiest palate.
The ubiquitousness of Thai food in the Rose City prompted one curious reporter to count up all the Thai eateries in the city back in 2017. Their research found that Portland had 130 Thai restaurants. That number might have changed in the ensuing years, particularly as the pandemic has forced so many restaurants to close their doors, but there's still a lot of Thai food around.

This writer has been a loyal customer of Bai Mint Thai Kitchen for many years. At a recent working lunch, my co-workers and I ordered from Bai Mint, prompting one coworker to happily exclaim:
"My god, these are the best salad rolls I've ever tasted! Where did you get them?"
In addition to the "fresh rolls" that my coworker was enthused about, Bai Mint Thai kitchen also offers its take on all your favorites. Noodle dishes like pad thai and pad khee mao, dumplings, stir fries, and fried rice are all available in a variety of flavor combinations. Most items offer a choice of vegetarian, tofu, shrimp, chicken, pork, or duck.
The pad cashew nut is a particular favorite. This dish combines cashew nuts, roasted chili, onions, bell peppers, water chestnuts, asparagus, and sweet chili paste with your choice of meat, tofu, or just vegetables. Bai Mint's tom yum soup comes in generous portions, filled with vegetables and spices, and with a carton of white rice if you want to reduce the spiciness. Pro-tip: eat it as spicy as you can stand it to help loosen up phlegm and clear out your sinuses. Totally worth it.
You can't go wrong with anything your order at Bai Mint Thai Kitchen. The ingredients are fresh and flavorful, and meal quality is consistently good.
Be sure to save some room for dessert. Bai Mint Thai Kitchen has delicious mango or coconut ice cream that makes a great palate cleanser after your meal. The mango sticky rice is also a filling but yummy dessert option to end your meal.
If you're not sick, you might want to dine in at Bai Mint. Their space is light, airy, and very clean. The service is friendly and competent without being oversolicitous. You can also order take-out or use a delivery service if you prefer to eat at home.
Bai Mint Thai Kitchen is also reasonably priced. Most entrees are priced between $11-13 with generous portions that are large enough to share -- or to have leftovers.
