    New restaurant at St. Paul's Union Depot to open next week

    The newest tenant of the restaurant space at St. Paul's Union Depot will open its doors on Thursday, Aug. 8.

    The atrium restaurant is called 1881 by Lake Elmo Inn, the work of John and Christine Schiltz, who own the Lake Elmo Inn from which he takes its name.

    The name "1881" references the year that both Union Depot and Lake Elmo Inn opened, which the Schiltzes say reflects "the deep historical connection the restaurant hopes to foster."

    "When people hear the story behind the name, they get chills,” said Chef John Schiltz. "It’s a testament to our belief in the potential of Saint Paul and the vibrant future we see for this community."

    1881 by Lake Elmo Inn will be operated in part by Frank Hopp (Christine's son) and Anna Schiltz (John’s daughter).

    The menu from executive chef Micheal Pearson will include a mixture of "favorites" from the Lake Elmo Inn as well as new dishes.

    "Menu items will include exciting dishes like Duck Eggs a l’Orange, eggs coated with seasoned breadcrumbs and filled with duck, Minnesota wild rice, vegetables and fontina along with orange dipping sauce," the restaurant said in a statement.

    "There will also be four hearty meals featuring 1881 Hereford beef, including a 1/2-pound burger, steak sandwich, New York steak, and sliced sirloin."

    There will also be a selection of craft cocktails for travelers and visitors at Union Depot. The restaurant will be open from 11 a.m. to 8 p.m. Wednesday to Sunday.
