Coffee, Salad and Go, and Bubba's 33 would all be a part of new phase of developments at Brooks. While there'll be a little wait for some of those new restaurants to launch, one popular Texas chain has already opened the doors to a new storefront in the growing neighborhood. Take a deep breath, because Cheddar's Scratch Kitchen has finally expanded to the southeast part of town, and it is open right now. That means no more long car rides and painstaking pilgrimages to faraway lands like the La&nbsp;Cantera-adjacent&nbsp;location or the OG Cheddar's off Northwest Loop 410. No, Southsiders can have a casual sit-down dinner at a familiar chain restaurant with a made-from-scratch comfort foods whenever they want now. Well, not whenever. The new Cheddar's, which officially opened April 3, operates 11 a.m. to 10 p.m. Sunday through Thursday and 11 a.m. to 11 p.m. Fridays and Saturdays. Cheddar's Scratch Kitchen got its start in Arlington, Texas back in 1979, the year that disco allegedly died, and since then the chain has expanded to have over 180 locations across the United States.
