But though it’s fun to experiment, we’ll never give up on juicy, sizzling, savory grilled steaks. It’s one of our favorite summer meals for a good reason, and we’re always looking for new grilled steak recipes to try out.     The most important part of any grilled steak recipe is, of course, the meat. Biegel’s steak of choice is the Teres Major cut, which she gets from a butcher in the Hamptons. The Teres Major cut of steak comes from the same place as a chuck roast, but unlike chuck roast (which is usually slow-cooked), the Teres Major is nearly as tender as the aptly named tenderloin, according to Painted Hills Natural Beef . But what makes it even better than the tenderloin in some peoples’ opinion is that it still has the strong beefy flavor you find in a chuck roast.

    But if you don’t have a butcher that can accommodate your request for a special cut of beef, then you can use hanger or skirt steak instead. Hanger steak is a flat cut of beef that comes from the belly area, but it’s not always easy to find in-stores (there’s only one hanger steak on each cow). Skirt steak also comes from the beef belly, and you may know it for its pleated texture, which it gets because of its long, thick muscle fibers. You’ll need to make sure to cut it across the grain before serving for the best bites. Both of these cuts may not be as tender as Teres Major, but they’re full of beefy flavor and forgiving on the grill.

    The steaks are grilled to medium-rare doneness, but the thing that really makes this recipe shine is the jalapeño butter. Not only does it add a luscious, slick layer of texture to the meat, but it also adds big flavor by way of minced jalapeño peppers, grated garlic, and lime zest. When the steak has rested but is still warm, smash a few big dollops of jalapeño butter over the sliced steaks, and as the butter melts it coats the meat, creating an instant sauce. Biegel serves her steaks over a watercress salad, with toasted baguette on the side that can be used to soak up any leftover juices on your plate, which are bound to be so good you’ll be tempted to use a straw.
