    Costco's New Shrimp Tempura Taco Kits Are the Most Fun Weeknight Dinner

    When we’re in need of a last-minute dinner, Costco always has our back. We’ve relied on Costco rotisserie chickens , either eaten as-is or transformed into a chicken recipe, more times than we can count. But Costco’s prepared deli foods shouldn’t be slept on, either. Earlier this year, we fell in love with the udon noodle salad kit in the Costco deli, but there’s a new Costco meal kit that’s perfect for our end-of-summer cravings, even on busy weeknights: crispy shrimp tempura tacos.

    Instagram account CostcoHotFinds shared the shrimp tempura taco kits with their followers. Each kit comes with tempura-fried shrimp, corn tortillas, pico de gallo, shredded cabbage, lime wedges, and a cilantro lime crema. You get 12 tacos for about $16 (the kits are sold by weight), which is cheaper than what we can get even at our corner taco stand in Los Angeles, so that’s a pretty amazing deal.

    The kits do come cold, so you’ll need to heat the shrimp back up to make it nice and crispy. And while a microwave would certainly heat them up, we don’t recommend it for crispy foods. Instead, the oven, toaster oven, or air fryer are your best bet. CostcoHotFinds shared that the shrimp tempura got super crispy in the air fryer, so that’s what we would recommend. We get a little squeamish about seafood in the air fryer just because of the aroma that can linger, so if you want peace of mind like we do, then use an air fryer basket liner to absorb the extra grease and cut back on clean-up and odors.

    Another tip comes from a commenter. If you’ve ever tried making tacos with corn tortillas at home, only for the tortillas to crumble and fall apart, then you might be skipping this essential step: you need to heat up your tortillas before you use them! One Instagrammer recommended heating the tortillas up on a flat skillet on medium heat, and we recommended wrapping them in foil or a clean kitchen towel after that so they can steam for a few minutes ( a tortilla warmer is a great option if you eat tacos a lot), which keeps them flexible so they don’t break when you’re eating.

    Summer might be coming to an end, but prepare one of Costco’s shrimp tempura taco kits for dinner, and you’ll feel like you’re on a vacation that never ends. Pair with some margaritas or your favorite canned cocktails , and you’d never guess that this meal didn’t come from a restaurant.
