    Giada De Laurentiis’ Pasta Alla Norma Is an Easy Sheet Pan Meal & She Just Gave It a 'Cheesy, Crispy Spin'

    If you love pasta as much as you love an easy weeknight meal, then you’re going to fall hard for Giada De Laurentiis’ Pasta All Norma. It’s a Sicilian staple that’s perfect for late summer because it’s packed with tomato, and it comes together in about 30 minutes on a single sheet pan. It’s so delicious and easy that Pasta Alla Norma will become a go-to on your weekly dinner rotation.

    “Pasta Alla Norma is a classic Sicilian dish that marries silky eggplant and sweet summer tomatoes with pasta,” a caption on a Giadzy Instagram post reads. “Giada gave it a cheesy, crispy spin by making this all one super easy sheet pan meal. It’s truly a dish we can’t get out of our heads.”

    De Laurentiis showed how to make her sheet pan Pasta Alla Norma in a TikTok video earlier this summer. She first starts by cutting up eggplant into bite-sized portions, tossing them with a bit of olive oil, and tossing them in the oven to roast up. She says in the video that the eggplant in Pasta Alla Norma is usually fried, but baking it is a bit healthier and lighter.

    While your eggplant is baking, you can boil your pasta to al dente. De Laurentiis recommends using a short tubular pasta like rigatoni rigate, ziti rigati, or elicoidali.

    When the eggplant is baked and the pasta is cooked, toss them together in a bowl with a tomato sauce made from canned, jarred, or fresh tomatoes, garlic, red pepper flakes, and oregano, then top the mixture with grated parmesan, fresh basil, and coarsely grated ricotta salada. Put everything on a sheet pan and pop it into the oven until the cheese melts and becomes a bit crispy on top. Finally, enjoy!
