    The Pioneer Woman Just Shared the Secret to Her Perfect Pancakes & This Trick Guarantees a Light & Fluffy Result

    Fresh-from-the-griddle pancakes (drenched in sweet syrup!) on the weekend is one of life’s greatest pleasures. Pancakes are a blank canvas of culinary possibilities, which can be topped in berries, peanut butter, meat, and more, or enjoyed on their own with a little butter. But if your pancakes fall flat, the whole breakfast will be disappointing too! Thankfully, Ree Drummond (aka, The Pioneer Woman) has a unique trick to help make your pancakes light and fluffy every time. She just shared her secret to perfect pancakes, and we are definitely taking notes!

    Drummond revealed her secret to the perfect pancakes in a new video on Food Network’s YouTube Channel. She starts with whisking dry ingredients, including flour, sugar, and more, in one bowl, then adding wet ingredients, like regular milk and buttermilk, in a separate bowl. She combines the wet ingredients with the dry, hand mixing with a spoon as she goes. The last part is her secret: she never uses an electric mixer when making pancakes!

    “You never want to stir pancake batter vigorously,” she coaches. “Sometimes I see pancake batter being made with an electric mixer or a stand mixer, and just whipping it, and I just think, ‘Oh no, don’t do that!’ You don’t want to overwork it because the whole secret to pancakes is to make sure they’re tender and fluffy.”

    Who would have thought?! She sticks to folding the batter to make sure there aren’t any “big clumps,” then she covers the bowl with plastic wrap and lets it “rest” for 45 minutes. “That kind of helps the flour to hydrate; helps get rid of most of the lumps; and it also will just make the pancakes much more tender,” she explained. It takes longer, but it’s so worth it! (You just might need a little breakfast appetizer while you wait!)

    If you like your pancakes on the thinner side, Drummond adds a little bit of milk at this point, then pours some batter on the griddle to start making them. They look so light and golden as they flip, and our mouths are watering. We’re ready for breakfast time!

    She tops the pancakes with butter and warm pancake syrup, but of course, you can add whatever toppings suit your fancy instead. With pancakes this delicious, you’ll wish you could have them every day!
