Everybody loves pizza night. Whether you order in or make your own at home, everyone ends up leaving the table satisfied. But if you’re trying to eat lighter and consume fewer carbs, then you may feel like you have to skip pizza night altogether. However, Molly Yeh has discovered a new way to eat pizza in salad form and you still get all that delicious flavor, as well as all your favorite toppings, without having to splurge on the dough.

Yeh posted a roundup of recent photos to her Instagram account, including a slide of one of her famous pizza salads.

“A good old leftover pizza salad,” she wrote in the caption of her post. “It had been a while since we’d done this.” And making your own pizza salad at home couldn’t be easier.

The spice combo you incorporate into the salad is the key to nailing down those pizza flavors. Yeh uses garlic powder, onion powder, dried parsley, dried basil, and dried thyme to replicate the taste of marinara. She likes to toss her crispy reach chickpeas in this spice blend as soon as they’re out of the oven, which act as croutons, but you could also use these spices in a salad dressing or sprinkle them right on top of the salad before tossing.

For the toppings, you can use whatever leftovers you have in the fridge — it looks like Yeh used some leftover cooked sausage, cherry tomatoes, roasted veggies, and olives for the salad in her Instagram, but you can get creative with your own toppings! Red onion, salami, prosciutto, sun-dried tomatoes, cooked shrimp, broccoli, chicken…really anything can go in this salad. As long as you’d eat on a pizza, it’s going to work great in this recipe.

Top your salad off with some freshly shaved parmesan and a drizzle of balsamic glaze and olive oil, and you’re ready to enjoy. You can grab Yeh’s full recipe here to gather some inspiration for your next pizza night.
