    Katie Lee Beigel’s Great Aunt Makes the ‘Very Best’ Pumpkin Bread & You Can Steal Her Recipe

    Sometimes you just have to splurge when it comes to dessert. And if you decide to make Katie Lee Biegel’s pumpkin bread recipe, which she grabbed from her Great Aunt Pat, then you’re going to have to be okay with shoveling quite a bit of sugar into each loaf. But Biegel found an easy way to justify it, and the final loaf looks so good that you won’t care about the sugar at all once you have your first bite.

    “I asked my great aunt for her pumpkin bread recipe because she always made the very best one,” Biegel said in a recent Instagram video. “And now I know why it was so good. It has a cup and a half of sugar and half a cup of oil in a loaf. I was going to cut it down and then I figured … it’s only pumpkin bread season once a year. So let’s do this.”

    To start, combine your eggs, sugar, and pumpkin puree in a large bowl. Then, in a smaller bowl, combine flour, pumpkin pie spice, baking soda, baking powder, and salt. Add the flour mixture to the egg mixture and gently fold. “The key here is to really not overmix the quick bread,” Biegel said.

    You’ll add a bit of water to the mixture once you see streaks of flour, and then gently fold once more. It’s okay that you see lumps — it’s more important not to make the loaf too tough.

    Pour your batter into a loaf pan and bake for about an hour until the loaf is golden brown and an inserted toothpick comes out clean. Let your loaf cool for about 20 minutes in the pan and then you’re ready to slice it up and enjoy!

    “It’s nice and crusty on the top and then super soft and moist inside,” Biegel said in her video. “Pat knows what she’s doing.”
