    Mexican Cornbread Recipe: Easy and Delicious!

    This cornbread is so flavorful and delicious. It is a really simple recipe to make and it is a family favorite when we are having soup or chili. You will need the following ingredients:

    Recipe:

    1 1/2 cups of self rising cornmeal

    1 tablespoon of jalapeno pepper, diced

    3 tablespoons of onion, diced

    1 1/4 cups of buttermilk (you may need more or less according to how thick it is)

    3 tablespoons of butter

    4 oz of shredded colby jack cheese

    Preheat the oven to 400 degrees.

    Take the jalapeno pepper and seed and diced it into really small pieces. Dice the onion into small dices also.

    In a oven safe medium sized skillet place the butter and jalapeno and diced onions and cook until they get soft. I use a 8 inch cast iron skillet. (You can also use a 8 x 8 or 9 x 9 baking dish)

    In a mixing bowl add the cornmeal and the buttermilk together and mix well. Pour the cooked jalapenos, diced onions and butter into this mixture.

    Add the shredded cheese into the cornbread mixture and mix again.

    Pour this mixture back into the oven safe skillet and place into the oven and cook for 25 - 30 minutes or until the top of the cornbread is golden brown. Enjoy!

    Note: This could be made using the boxed corn bread mix and if you like more spice than add more jalapeno peppers including the seeds.

    I serve this warm along side a bowl of chili or soup and sometimes we have it when we are having a bbq pork loin.
