    Potato Patty Recipe: Easy and Delicious Way to Use Leftovers!

    I made this recipe up because I had some leftover mashed potatoes and they were not going to go with the meal I was planning. So, I decided to make a batch of loaded potato patties. It is a really simple recipe to make using leftover mashed potatoes. You will need the following ingredients:

    Recipe:

    1 1/2 cups of leftover mashed potatoes

    3 - 4 tablespoons of flour

    2 tablespoons of onions, diced finely

    1 tablespoon of chives

    1 tablespoon of sour cream

    1 - 3 teaspoons of milk

    1 cup of grated cheddar cheese

    2 tablespoon of bacon bits

    salt and pepper to taste

    1/2 cup of cooking oil

    Preheat a medium skillet to medium to medium high heat.

    In a medium bowl add the potatoes, 3 tablespoons of flour, onions, chives, sour cream, 2 teaspoons of milk, cheddar cheese, bacon bits, salt and pepper and mix well.

    You want the potatoes to be really stiff not soft at all. You may have to adjust the milk and flour to get the consistancy you need.

    Add the oil to the skillet and let it get hot.

    Very carefully spoon about a tablespoon of the mixture into the hot oil. I use another smaller spoon to spread the potatoes out some. Let the potatoes cook until they are golden brown on the bottom and then flip them over. Tip: I do this only once so I don't scramble the potato patties up.

    Carefully remove the potato patties, after they have cooked through, and place them on a paper towel lined plate or a wire cooling rack. Enjoy!

    Note: You could make these less fussy by just adding the potatoes, flour, milk, and onions. That is the way most of us ate potato patties growing up.

    I like to serve these with grilled meat or on the side of a sandwich.
