    Pollo Asado Marinade - Chicken Recipe: Easy and Delicious!

    I love this pollo asado chicken marinade. It is really easy to make and it goes with a lot of different dishes. It is one of my go to marinades, whether grilled in the summer months or made under the broiler the rest of the year. You will need the following ingredients:

    Recipe:

    3 boneless skinless chicken breasts

    1/4 cup of orange juice

    2 tablespoons of lime juice

    2 tablespoons of lemon juice

    1/4 cup of oil

    1/2 teaspoon of cumin

    1 large garlic clove minced, or 2 small

    1 jalapeno pepper, cut into small pieces

    salt and pepper to taste

    Combine the orange juice, lime juice, lemon juice, oil, garlic, jalapeno, cumin, salt and pepper into a plastic bag or bowl and mix the marinade together.

    Trim the chicken breast and then cut it into cutlets by cutting the chicken breast into 2 pieces length ways.

    Add the chicken and make sure the marinade has coated all sides of the chicken breast. Place the chicken into the refrigertor for at least 30 minutes but up to 12 hours.

    Preheat the grill.

    Remove the chicken from the refrigerator while the grill is heating so that it takes the chill off of the chicken breast.

    Grill the chicken until an internal temperature of 165 degrees has been reached and then place the grilled chicken breast on a plate and let it rest for a few minutes.

    Note: You can use any cut of chicken you like whether it is bone-in or boneless. Just allow for extra cooking time. You can broil this in the oven or cook the chicken on the stove top.

    One of my favorite ways to serve this chicken is as a salad but you could serve this in a tex-mex bowl, fajatas, or in a burrito.
