Street Corn Pasta Salad with Blackened Chicken Recipe: Easy and Delicious!

I came up with this recipe when I was trying to use up several fresh ingredients I had on hand. It was so simple to make. You will need the following ingredients:

Recipe:
1/2 pound short cut pasta
1/2 cup of onion, diced finely
1 jalapeno pepper, diced finely
1 small bell pepper or banana pepper, seeded and diced finely
1 cup of shredded cheese ( I used monterey jack and colby)
1/2 cup of mayonnaise
1/2 cup of sour cream
2 tablespoons of lime juice
1/2 cup of fresh or frozen corn
1 pound of chicken breasts
2 tablespoons of oil
1/2 garlic powder
blackened seasoning and salt and pepper to taste
Optional: Chives, diced avocado, tomatoes, mexican crumbling cheese and cilantro to name just a few
Begin by cooking the pasta using the package directions.
While the pasta is cooking trim your chicken breast and cut it in half length ways so that you have 2 cutlets from each chicken breast. Sprinkle the blackening seasoning on the chicken.

Preheat a large skillet and add 2 tablespoons of oil and place the chicken cutlets in the skillet and cook until they reach an internal temperature of 165 degrees.

In a large bowl add the mayonnaise, sour cream, salt, pepper, garlic powder, dash of blackening seasoning and the lime juice and mix until it is well combined.

Add the corn, onions, peppers, and cheese and stir together.

When the pasta is cooked, rinse it under cold water to stop the cooking process. Add this pasta to the bowl of dressing and vegetables and stir together.

I like to slice the cooked chicken breasts up and place them on the top of the salad and then stir all of this together.

You can serve this right away or put it in the refrigerator for up to 2 days.
Note: You can add any vegetables or cheese that you would like to add to this pasta salad. You can leave the chicken out or just buy precooked chicken to add if you do not want to cook the chicken fresh.
I like to serve this just after it has been assembled together. I then store any leftovers, if there is any, in the refrigerator for lunch the next day.
