    Chuck Roast with Vegetable Recipe! Easy and Delicious!

    Making a pot roast is one of my favorite recipes to make. It brings back childhood memories for me. They are really simple to make. You will need the following ingredients:

    Recipe:

    2 -3 pound chuck roast (any size or roast cut will do though)

    3 large carrots

    1 large onion

    5 medium potatoes

    32 oz beef broth

    3 tablespoons of butter

    salt and pepper to taste

    I cook my pot roast in a crockpot but you can cook these in the oven also. Just adjust the cooking time.

    Wash, peel and chop up the carrots and potatoes. Dice the onions into small pieces. You can leave the onions larger but I prefer mine diced.

    Place the chuck roast into the crockpot and season it with salt and pepper.

    Add the potatoes, carrots and diced onions on top and season the vegetables with salt and pepper also.

    Pour the beef broth over the roast and vegetables. You need to cover almost all of the vegetables. Tip: You may have to adjust this by adding water if you need more liquid or leaving some of the broth out if it is too much.

    Place the butter on top of this and add the lid and place on high for 2 hours then turn the crockpot to low for another 6 - 8 hours. A good tender pot roast is done when the meat falls apart. If it is still tough keep cooking it. Enjoy!

    Note: You can add celery to this but I did not have any to add at this moment and to be honest I usually do not add it to my roast.

    I like to serve this with some warm cornbread on the side or a roll. I grew up eating it with white sandwich bread and it is delicious also.
