    Springfield-Greene Co. food inspectors check out MSU dining halls, elementary cafeterias

    With school back in session, the Springfield-Greene County Health Department's restaurant inspectors took a look at 11 establishments, including those on the Missouri State University campus, and found four priority violations among them this past week.

    Greenwood Laboratory School received a priority violation for not having sanitizer in its dish machine, which was corrected on site. MSU's Garst Dining Hall was cited for two priority violations: Pom and Honey's hot holding unit not keeping food warm enough and for the deli's cold-holding unit not working properly. Those violations were corrected by plugging the hot holding unit in and by using ice baths at the deli station. Also at MSU, Queen City Soul Kitchen was cited for mac-and-cheese being below 135 degrees, which was corrected by reheating the food in the oven.

    Issues found during inspection fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross-contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down. Non-priority violations alone do not directly affect food safety, such as dirty floors, sticky tabletops or outside trash cans not being covered.

    Food inspections take place one to three times a year, depending on the type of food served, the population served, difficulty of food preparation and past history. Restaurants preparing food from raw ingredients are inspected more often "than convenience stores that serve only non-potentially hazardous foods, such as popcorn and soda," according to the Springfield-Greene County Health Department .

    Each report identifies what was happening at the establishment at that time. Consumers who want to know whether a violation is a one-time thing or a pattern are encouraged to refer to previous reports .

    7 Brew Coffee , 1455 W. Battlefield Road, Springfield. Aug. 26 routine inspection – Result: active. One priority violation: Observed almond milk on counter at 49 degrees and whole milk on counter at 51 degrees, which was corrected by placing items on time as control and education provided. No non-priority violations.

    Alpha Chi Omega Sorority , 1031 E. Cherry St., Springfield. Aug. 26 routine inspection – Result: active. No violations noted.

    Arby's Roast Beef Restaurant No. 0136 , 735 S. Glenstone Ave., Springfield. Aug. 28 routine inspection – Result: active. No violations cited.

    Arby's Roast Beef Restaurant No. 600 , 2225 S. Campbell Ave., Springfield. Aug. 26 routine inspection – Result: active. No priority violations. One non-priority violation: Observed employee drink stored above food contact surfaces, which was corrected on sire and education provided.

    Asian Hut , 1500 E. Sunshine St., Springfield. Aug. 26 routine inspection – Result: active. One priority violation: Observed raw chicken stored above raw beef inside walk-in cooler, education provided and corrected on site. Two non-priority violations: Observed shredded lettuce on countertop not marked for time as control, which was corrected on site by voluntarily discarding lettuce; observed plastic bags placed over top hand sink spout and inside hand sink basin, education provided and corrected on site.

    Atrium Bakery, Cox South , 3801 S. National Ave., Springfield. Aug. 28 routine inspection – Result: active. No violations cited during inspection.

    Big Momma's Drive Thru/Queen City Soul Kitchen , 1626 N. Boonville Ave., Springfield. Aug. 23 routine inspection – Result: active. One priority violation: Observed milk, half and half and almond milk above 41 degrees Fahrenheit, which was corrected by voluntarily discarding items and adjusting temperature of unit. No non-priority violations.

    Big Whiskey's Republic , 900 N. Old Town Ave., Republic. Aug. 26 re-inspection – Result: risk control plan. One priority violation: Observed brie spread at 46 degrees, ham at 46 degrees and cooked ribs at 46 degrees, which were all discarded. No non-priority violations.

    Blue Heron , 206 E. Commercial St., Springfield. Aug. 22 routine inspection – Result: active. Two priority violations: Observed Swiss and Provolone cheese above 41 degrees in line cooler, which were discarded and education given on proper storage; observed dish machine with 0 parts per million on bleach given no prime in line, which was corrected on site and education given. Two non-priority violations: Observed mouse feces behind water heater and in corner of storage room, education provided and feces cleaned up; observed no sanitizer strips during inspection, education given.

    Boys & Girls Club - Stalnaker Unit , 1410 N. Fremont Ave., Springfield. Aug. 27 routine inspection – Result: active. No violations noted.

    Braum's Ice Cream No. 274 , 604 N. Glenstone Ave., Springfield. Aug. 28 routine inspection – Result: active. One priority violation: Observed cottage cheese, Greek yogurt, sour cream, southwest sauce, shredded cheese and ranch above 41 degrees in Expediter cold holding unit, which was corrected by adjusting the unit and voluntarily discarding items. Two non-priority violations: Observed gap on exterior door in back of kitchen; observed worn seal on Expediter cold holding unit, education given.

    Cabos Bonitos Grill & Cantina LLC , 406 S. South Ave., Springfield. Aug. 21 routine inspection – Result: active. No violations observed.

    Charcoal Group LLC , Springfield. Aug. 22 routine inspection – Result: active. One priority violation: Observed not properly date marking ready-to-eat potentially hazardous foods with the 7 day discard date, which was corrected at time of inspection. No non-priority violations.

    Chipotle Mexican Grill No. 1050 , 3356 S. Campbell Ave., Springfield. Aug. 23 routine inspection – Result: permitted with re-inspection. Re-inspection scheduled for Aug. 28. Two priority violations: Observed ambient and air temperatures ranged from 46 degrees to 55 degrees in one-door stainless cold holder, one batch of chicken and steak voluntarily discarded due to temping above 41 degrees; observed four knives found stored dirty with food debris on magnetic rack, which was corrected on site by washing, rinsing and sanitizing knives. One non-priority violation: Observed leak in plumbing line at three-vat sink, which has a work order in place for repair.

    Cielito Lindo , 3530 S. Campbell Ave., Springfield. Aug. 22 routine inspection – Result: active. No violations cited.

    Club Rodeo , 2032 W. Bennett St., Springfield. Aug. 23 routine inspection – Result: active. One priority violation: Observed raw shell eggs and raw beef stored above lemons and limes in two-door stainless fridge, which was corrected on site. No non-priority violations.

    Cracker Barrel Old Country Store No. 127 , 2858 N. Glenstone Ave., Springfield. Aug. 28 routine inspection – Result: active. No violations observed.

    Fazoli's , 2055 E. Independence St., Springfield. Aug. 23 routine inspection – Result: active. One priority violation: Observed dish machine not properly chemically sanitizing due to chlorine supply being empty, which was corrected on site. No non-priority violations.

    Imo's Pizza , 600 S. Pickwick Ave., Springfield. Aug. 21 routine inspection – Result: active. One priority violation: Observed slicer had large amount of old food debris present on blade and equipment surface, which was corrected on site and education provided. No non-priority violations.

    La Hacienda , 1370 S. Glenstone Ave., Springfield. Aug. 28 routine inspection – Result: active. No priority violations. Two non-priority violations: Observed shelf above three-vat sink is pressed wood with paint starting to fade and chip; observed container with single service items inside, such as lids, was dirty, which was corrected by voluntarily discarding single service items and education provided.

    Lucy's Chinese Food , 3330 S. Campbell Ave., Springfield. Aug. 21 routine inspection – Result: active. One priority violation: Observed bucket full of raw chicken sitting directly on top of raw chicken in cardboard box in walk-in cooler, which was corrected by voluntarily discarding chicken.

    Mercy Rehabilitation Hospital Springfield Kitchen , 5904 S. Southwood Road, Springfield. Aug. 23 routine inspection – Result: active. One priority violation: Observed open employee drink in food preparation area, which was corrected by removing drink and providing education. No non-priority violations.

Two priority violations: Observed rice and chicken in hot holding unit at Pom and Honey station were below 135 degrees and rice and lentils below 135 degrees, which was corrected on site by reheating products to 165 degrees; observed multiple food items at deli station were above 41 degrees, cold-holding unit was not working properly, which was corrected on site by transferring products that were on the line for less than three hours to ice baths. One non-priority violation: Observed cold well unit not working at deli station, error message and no cold air being dispensed, and holding unit at Pom and Honey unable to keep foods above 135 degrees, corrected on site by plugging in Cambro unit being used for hot foods at Pom and Honey station and ice baths at deli station along with backup units.

    N'Joy Thai Streetfood LLC , Springfield. Aug. 21 re-inspection. All priority violations have been corrected.

    One2Five , Greene County. Aug. 23 routine inspection – Result: active. Two priority violations: Observed bratwurst in hot holding below 135 degrees, which was corrected on site and education given; observed cooked chicken and sliced mozzarella in upper line cooler above 41 degrees, which was corrected on site and education given.     Parkview High School Cafeteria , 516 W. Meadowmere St., Springfield. Aug. 23 routine inspection – Result: active. No priority violations. One non-priority violation: Observed exterior door to kitchen break area can see daylight along bottom, education given.

Three non-priority violations: Observed employee drink stored over single-service straws and employee drink stored above single-service hamburger containers, which was corrected on site and education provided; observed fryer oil and waste dumped down mop sink and mop sink plumbing is no longer functioning, education provided and Fats, Oil and Greases notified; observed multiple areas with debris buildup, walk-in freezer has buildup inside and along walls, grease buildup present in cook station, ice machine storage utensils have buildup, education provided.

Three priority violations: Observed eggs at 48 degrees, salad mix at 50 degrees and tofu at 52 degrees in walk-in cooler, which had an ambient temperature of 48 degrees, so food was discarded and re-inspection scheduled; observed mayo-based sauce at 57 degrees, which was discarded; observed opened crab meat and cream cheese do not have discard dates, which was corrected at time of inspection. No non-priority violations.

    Sushi Village , 1440 W. Republic Road, Springfield. Aug. 23 re-inspection at noon – Result: permitted with re-inspection. Unit had been fixed but temperature will still above 60 degrees. No violations noted.

    Sushi Village , 1440 W. Republic Road, Springfield. Aug. 23 re-inspection at 5 p.m. – Result: active. Conducted re-inspection. Unit was down to 45 degrees, inspector instructed them not to use it until 41 degrees or below, compliance check set for Monday. No violations noted.
