    Tolbert’s Chili Parlor, a cherished institution in Grapevine, Texas, is steeped in history and culinary tradition. Founded by Frank X. Tolbert, a Texas historian and chili aficionado, the restaurant has become synonymous with authentic Texan chili and vibrant local culture. Today, under the stewardship of Frank’s daughter, Kathleen Tolbert, the restaurant continues to honor its roots while delivering exceptional dining experiences in a historic setting.

    Frank X. Tolbert’s passion for chili was profound and influential. His journey began in 1955 when he traversed the perimeter of Texas in a Jeep with his son, Frank II, exploring the rich culinary landscape of the state. Tolbert’s dedication to Texas cuisine culminated in his world-famous book, “A Bowl of Red,” published 53 years ago. A celebrated columnist for the Dallas Morning News for 37 years, Tolbert was also a prolific author of eight books and the founder of the Terlingua Championship Chili Cook-Off in 1967.

    In 1976, Frank X. Tolbert joined forces with his son to open the first Tolbert’s Restaurant in Dallas. Kathleen Tolbert began managing the restaurant in 1977, immersing herself in the family business and contributing to its early success. The restaurant’s rich history continued to evolve when Kathleen, alongside her husband Paul Ryan, relocated Tolbert’s to Grapevine’s historic Main Street in 2006. Today, Tolbert’s Chili Parlor remains a testament to Frank X. Tolbert’s original vision, featuring classic Southwestern cuisine and the same iconic chili recipe developed by Frank X. Tolbert and his son.

    Kathleen spends her time in the ghost town of Terlingua where she now governs the largest chili cookoff worldwide and is held in the first week of November.
