Opened in February 2020, just weeks before the pandemic reshaped dining norms, Goldee’s has persevered to deliver exceptional smoked meats and a community-focused experience. Co-founders Jalen Heard, Jonny White, and Lane Milne have crafted a menu that reflects their passion for quality barbecue while also emphasizing the importance of customer service.

    From the moment you arrive, Goldee’s exudes a welcoming atmosphere. The staff is dedicated to ensuring every guest feels at home. “We want to serve you the best quality at the fastest pace,” says Jalen Heard. This commitment to service is reflected in their operational practices, including a recommendation to arrive between 8-10 a.m. to guarantee access to the full menu. “If you come early, you’ll have the widest selection and the freshest cuts,” Heard emphasizes.

    As the day unfolds, the line can grow, but it typically shortens by around 1-2 p.m. While the cafe aims to have staples like chopped beef and sausage available until 3 p.m., many popular items may sell out earlier. “We apologize for any inconvenience this may cause,” the staff notes, highlighting their dedication to quality over quantity.

    Guests waiting in line are treated to free water, and sometimes complimentary beer for those over 21. “It’s just a little something to make the wait more enjoyable,” says Jonny White. Seating is available, but patrons are encouraged to bring their own lawn chairs, especially during peak times.

    In winter, Goldee’s sets up patio heaters to keep guests warm as they wait. “We want everyone to be comfortable while they anticipate their meal,” White adds. To help speed up the ordering process, guests are encouraged to think about their selections ahead of time. “It allows us to keep the line moving quickly and efficiently,” says Heard.

    Ordering Guide: A Culinary Adventure

    Goldee’s menu is a meat lover’s dream, with a variety of smoked options and hearty sides. For an optimal dining experience, the staff recommends about ½ to ¾ lb of meat per person. If you’re looking for a lighter option, ¼ lb will suffice. Here’s a breakdown of some popular items:

    • Brisket: Served with a mix of lean and fatty cuts.
    • Ribs: 2 ribs equal approximately ½ lb, while 4 ribs are about 1 lb.
    • Sausage: Each link weighs around ¼ to ⅓ lb.
    • Turkey: Available in portions from ¼ lb (2 slices) to 1 lb (8 slices).

    For sides, guests can choose from three sizes—small (feeds 1-2), medium (feeds 4), and large (feeds 8)—ensuring everyone can enjoy a variety of flavors. Each order comes with fresh, in-house made bread, although the staff requests moderation in portion sizes to ensure availability for all diners. “If you need more pickles or onions, just ask!” the team encourages.

    Currently, the to-go order line is combined with the dining-in line, which helps streamline service. “If you want your food for here, please don’t get it to-go,” Heard advises. “This helps us manage the flow better.” They are also working on adding pre-order options, which will be updated on their website as soon as available.

    The staff encourages guests to order together and share as a group to move through the line more quickly. Though Goldee’s doesn’t sell burnt ends regularly, they often provide extras when available. “We love to surprise our guests with something special,” says Milne.

    At Goldee’s, the sides are just as carefully crafted as the meats. “Most barbecue spots might nail the meats, but usually the sides are kind of lacking,” Heard notes. To combat this, the team has developed a range of flavorful side dishes that complement their smoky offerings. One standout is the Brussels sprouts, which are rotisserie-cooked and served au gratin, demonstrating their commitment to a complete meal experience.

    In addition to Goldee’s, the team recently launched a companion restaurant, Ribbee’s (923 E Seminary Dr, Fort Worth), which focuses on baby back ribs and beef ribs. “I’m not really trying to win a James Beard [Award],” White says. “I’m trying to serve food very fast and make it good.” Ribbee’s offers four flavors of baby back ribs, with a fan-favorite hot honey sauce that customers rave about.

    The Goldee’s family places a strong emphasis on kindness and patience. “Please be patient and kind to the people working on the service line,” they remind guests. “We are more than willing to accommodate any needs you might have.” After the meats are cut, the sides person will assist with sides, desserts, pickles, onions, and bread, while sauces are readily available on the tables.

    Goldee’s Barbecue has not only established itself as a leader in Fort Worth’s culinary scene but has also become a community hub where good food and camaraderie flourish.
