Pocono hotel debuts new fine dining restaurant

A Pocono Mountains estate hotel has opened a new in-house fine dining restaurant.

The Swiftwater debuted The Olivet on June 10.

Owners of the property said their goal was to combine a “refined dining atmosphere” that blends with the “fresh mountain air.”

The restaurant features indoor and outdoor seating on a garden patio. The restaurant boasts floor to ceiling glass doors, which open to the patio during the warmer seasons.

The indoor dining room is a blend of wood beams, glass chandeliers, and gold accents. The bar features a marble countertop, custom gold centerpiece, and gold floral accent lights.

The menu highlights include braised pork belly, beetroot burrata salad, a 12oz. New York strip au poivre, ricotta gnudi, and Green Walk Hatchery rainbow trout.

There is also a full breakfast menu.

The bar features a full cocktail, wine and beer menu with signature drinks like the Olivet Martini.
